Guest Blog: Alexia Makes Low-Fat Baked Ziti

Hi all Carrot ‘N’ Cake readers! I am new to this so please bare with me. I ran across Tina’s blog a few months ago and LOVED it. I was hooked from day one. I had never seen or heard of a “food blog”. The more and more I read, the more interested I got in doing one of my own. I thought what a great idea to hold myself accountable. I played with the idea for several weeks. I was really nervous/afraid of what to expect, especially from my husband. He is a HUGE support. So I started my own blog: www.doodlebugsjourney.blogspot.com!

When I saw Tina was asking for guest bloggers, I thought what a great idea and a way to get myself out into the blog community. I emailed her and she said it was a great idea and she would love for me to do it. She is super nice! I decided on a RECIPE REVIEW! So, here it goes:

Low Fat Baked Ziti

Ingredients:

8 ounces ziti noodles (I have never been able to find ziti, so I just use penne)
1 1/2 cups fat free cottage cheese
1 egg WHITE
1 tsp dried basil
1 tbsp dried parsley
1/4 cup of reduced fat grated Parmesan cheese
1 (26 ounces) Hunt’s Four Cheese Spaghetti Sauce
1 cup 2% Mozzarella Cheese (you could use fat free, but I prefer the 2 %)
8 x 8 Pyrex dish
cooking spray

Instructions:

Cook the noodles according to the package.

Preheat the oven to 350 degrees

In a bowl, combine the cottage cheese, egg white, parsley and basil

Once the noodles are done drain them and pour them back into the pot

Pour half of the spaghetti sauce into the pot and mix together

Spray Pyrex dish with cooking spray

Spoon half of the noodle/sauce mixture into the Pyrex

Spoon all of the cottage cheese mixture on top

Spoon the rest of the noodle/sauce mixture

Top with the rest of the Spaghetti Sauce

Pour Parmesan cheese on top

Bake 30-35 minutes or until bubbling

Add mozzarella cheese on top and bake for an additional 5 minutes or until the cheese has melted

Makes 6 servings
334.5 calories, 6.83 fat per serving
