It’s quite the yucky day in Boston this morning. Cold, dark, and windy with a “wintry mix” of rain and snow… all things things that I consider yucky!
My oats, however, were not at all yucky– far from it, actually!
And, of course, I ate them with a big scoop of Barney Butter.
Gingerbread Oats
Makes 1 serving
Ingredients:
- 1/2 cup dry oats
- 2 tsp molasses
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- Pinch of nutmeg
- 1/2 cup almond milk
- 1/4 cup canned pumpkin
Directions:
- Combine ingredients; mix well.
- Cook in microwave for 2 minutes.
- Stir and enjoy!
In the office, I made myself a mug of coffee with agave nectar and vanilla hemp milk, which doesn’t blend well in coffee and needs constant stirring!

Friday!!! We’ve just about made it to the weekend! Wahoo!
My Friday started off with a sweet bowl of raisin-nutmeg oats, topped with soft part-skim ricotta mixed with honey and almond slices.

Measurements:
- 1/2 cup dry oats
- 1/4 cup raisins
- 1/2 tsp nutmeg
- 1 tbsp ground flaxseed meal
- 2 tbsp ricotta mixed with 2 tsp honey
- Sprinkle of sliced almonds
The ricotta-honey mixture definitely jazzed-up my oats this morning. It was almost like sweet, creamy frosting on top of my oatmeal! Mmmmmm! The combo of raisins and nutmeg reminded me of the holiday season! Love it!

On my way to work, I stopped for an iced coffee from Dunkin’ Donuts. I don’t know where the craving came from!? Usually, I switch from iced coffee to hot in the fall, and don’t switch back again until the spring. I’m a tad on the dehydrated side this morning (running + wine last night), so iced coffee just appealed to me more than hot. Now, I’m chugging H20 from my Sigg!

Oh my gosh, this Chocolate Pumpkin Loaf came out so well! I’m so pleased!
It’s superĀ moist and chocolately, almost like chocolate cake, but with hints of cinnamon and nutmeg. It would make the perfect dessert after Thanksgiving dinner, especially with a warm cup of coffee or tea.
Ingredients:
- 1.25 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup sugar
- 3/4 cup packed brown sugar
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/2 can (7.5 ounces) pumpkin
- 1 cup chocolate chips
Directions:
1. Preheat oven to 325*F. Grease loaf pan.
2. Combine all ingredients in large mixing bowl; blend well.
3. Once mixed, pour batter into loaf pan.
4. Bake for 40-45 minutes, until top is firm and a toothpick comes out clean.
5. Allow loaf to cool for 15 minutes; dust with powdered sugar (if desired).
