Clementines Go Artsy

I really, really, really want my camera back from the Geek Squad! I received another update this morning that my camera is being “Repaired.” Gaaah!! Hurry up, Geeks!! But, not having my camera has made me think outside of the box when photographing and displaying my food pics on the blog. This clementine collage looks pretty cool to me! :mrgreen:

I ate a clementine and an Adora disk as a mid-morning snack today. When taken together, vitamin C helps with the absorption of calcium. Pretty neat, huh?

(Ugh, these yucky photos are killing me!)

The rest of lunch was a homemade salad with extra carrot sticks for dipping into sun-dried tomato hummus. I also had some leftover sweet potato fries, which I warmed-up in the microwave.

I followed-up all of those veggies with a Lemon Zest Luna Bar, which tasted like a crunchy lemon square! Yum! :-D

Still Playing

Let me start by saying that I love my husband dearly

After my shift at Healthworks, I arrived home to this… 

That’s right, Mal cracking-out to video games. No big deal… unless he had been playing since I left for my HW shift more than 4 hours earlier! He played non-stop video games (specifically Left 4 Dead) for almost 4.5 hours!! Impressive, right?

Mal took a short break to eat dinner with me, but now he’s back at it again! I don’t know how he does it!? I’m surprised his butt doesn’t fall asleep! Does anyone else’s husband/fiance/boyfriend have this same video game problem/addiction? 

Dinner

For dinner last night, Mal made a wonderful brown rice, black bean, and salsa mixture that turned out delicious! (I think the fresh salsa was key!) It was light and refreshing, but, at the same time, filling and flavorful. In addition to his mad Zombie-killing skills, Mal is also an excellent cook! :-D  

With my rice-bean-salsa salad, I had a variety of veggies: carrot sticks, roasted brussels sprouts, and grape tomatoes. 

Dinner with hot peppermint tea… 

While Mal is defending the world from Zombies, I will be doing some baking! Be back later! :)

Christmas Morning Muffins

Christmas Morning Muffins
Makes 12 muffins*

Ingredients:

1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/3 cup canned pumpkin 
1/4 cup molasses
1/2 cup sugar
1/2 cup shredded carrots
1/3 cup raisins
1/3 cup chopped walnuts (optional) 
1/3 cup hot water
