Breakfast was an easy decision today. Nope, not oats! Last night, I had brainstormed a cheesy asparagus egg white omelette, so when I work up this morning, I was excited to try it out!
Ingredients:
- 1/2 cup liquid egg whites
- 4-5 spears of steamed asparagus, chopped
- 1 (heaping) tbsp cottage cheese
- Swiss cheese to taste
This photo makes my omelette look teeny-tiny (weird angle, perhaps?), but it was super filling and is sitting in my stomach like a rock now!

Also with breaky, iced coffee with chocolate soy milk and agave nectar.
Coffee drinkers: I’m tellin’ ya, you gotta try chocolate soy milk in your coffee. It’s so incredibly sweet and creamy! My iced coffee is almost like a coffee milkshake this morning!

For sweet treats, I had a dark chocolate Adora disk and a handful of Zoe’s granola.
No matter how hard I try, I just need something sweet after every meal. I swear this habit is genetically programmed into me!

I’m off to do wedding stuff with my sister this afternoon. All of her bridesmaids are coming to get measured for their dresses, and my sis is making her final decision on the style. I think she is leaning toward a long, dark plum, v-neck style dress for us. Sounds pretty, right? I’ll try to snap a pic this afternoon!

I always seem to forget how much I love pasta! For some reason, when I think pasta, I usually think boring. I really shouldn’t think this because I always end up loving whatever pasta dish I am eating. Maybe I’ve had some bad pasta experiences in the past? Pasta is definitely one of those hit or miss kind of dishes– you can either nail it with an amazing recipe or completely miss the boat with a blah one. Luckily, tonight’s pasta dinner was the former!
I cooked-up a simple whole wheat linguine dish with pink pesto sauce, broccoli, and frozen asparagus. I cooked the pasta and veggies separately, and then threw everything together with the sauce in a big pot and mixed well. Viola! Dinner was served!

The sauce that I used was a creamy pink pesto sauce from Sauces ‘n Love’s Scarpetta line. The sauce was a rich blend of creamy tomato sauce with a punch of savory pesto for a flavor. Ingredients include: Tomatoes, onions, extra virgin olive oil, fresh organic basil, cream, Parmigiano Reggiano, Pecorino Romano, garlic, pinenuts, salt & pepper. The pink pesto sauce covered the linguine just right– it was thick, but not too heavy.
Another cool thing about the Sauces ‘n Love products (this is going to sound dorky) is that they come in really great, heavy-duty plastic containers with screw-on tops. They’re great to reuse, especially for packing lunches and commuting to work.

As always, I needed something sweet to finish my meal. With Barney Butter in the house again, the decision was easy: a toasted Arnold Sandwich Thin with Barney Butter spread on top. The heat from the Sandwich Thin made the BB all melty and gooey… holy yum!!!

There may or may not be a contest giveaway on CNC tomorrow! Be sure to check back in the morning!
Good night, guys!!! Sleep tight, don’t let the bed bugs bite! (Ewww, what a creepy saying! I had never thought about it before! I think the saying should be changed to something like: “Sleep tight, I hope you are able to get rid of your bed bugs!!”)
