1st Wedding Anniversary Recap: Part 4

Today is officially our 1-year wedding anniversary! Happy anniversary to us! :-D

I saved the best recap for last: wedding cake! :mrgreen:

I absolutely loved our wedding cake! It had 4 layers, each with a different cake + frosting combination:

  • Top layer: Carrot Cake (of course!)
  • 2nd layer: White cake with vanilla and mocha buttercream filling
  • 3rd layer: Chocolate cake with hazelnut buttercream and chocolate truffle filling
  • Bottom layer: Lemon-Strawberry cake combo

Mal and I didn’t smash cake into each other’s faces like some couples, but cutting the cake at our reception was really fun!

We didn’t arrive home from our trip until late tonight, but it didn’t stop me from digging into the top layer of our wedding cake. (We put it in the fridge to defrost over the weekend.)

In keeping with tradition, we froze the top layer of our wedding cake to eat on our 1st wedding anniversary.

Mal’s step-mom wrapped it up good and tight last July 12th!

After unwrapping the top layer, our wedding cake looked a little beat-up, especially after being wrapped a million times in plastic wrap and stored in our freezer for a year.

I was so worried that our cake would have freezer burn and taste bad, but it didn’t at all! It was SO GOOD!

The actual carrot cake was surprisingly soft and moist. Holy yum! :mrgreen:

Mal and I each had a piece of cake and chatted about our first year of marriage. It was such a wonderful way to spend the last couple of hours of our anniversary.

1st Wedding Anniversary Recap: Part 3

Immediately following the ceremony, our reception was held at the Sky Meadow Country Club in Nashua, New Hampshire. It was such a gorgeous place to have a reception! The ballroom had high ceiling to floor windows, a fieldstone fireplace, and large dance floor, which was rarely empty at the reception. The ballroom overlooked a beautifully landscaped “Bridal Garden” and an 18-hole golf course. (Mal was pretty excited about that last part! ;-) )

Our reception was lively from the beginning to the very end! The dancing, singing, and laughing never seemed to stop! In fact, the “after party” at the hotel went very late into the evening! :-D It was a par-tay!

My best advice for all of the brides-to-be is to make sure that you ENJOY your wedding day! Mal and I made it a point to have the time of our lives and not get wrapped up in the details. And, our wedding day was honestly the BEST day of my life! We had SO MUCH fun! :mrgreen:

1st Wedding Anniversary Recap: Part 2

Our wedding ceremony took place in our hometown at our church. Both of our families have belonged to this same parish for as long as we can both remember.

Our families actually sit on opposite sides of the church, so during the ceremony, our priest joked that he was marrying the Montagues and Capulets!

We had beautiful, sunny weather on our wedding day, but it was 85 degrees and humid, which probably doesn’t sound that bad… unless you are sitting through a full Catholic Nuptial Mass in a church that does not have air conditioning! Even still, the ceremony felt like it totally flew by!
