I’ve had quite the Saturday so far! I don’t think that I’ve stopped moving all day. Must be all of that espresso!
The photo shoot for OpenSky went much better than expected. Usually, I get SO nervous on camera and speaking in front of groups– and I avoid these types of situations as much as possible. Basically, I panic. My mind goes blank and I start sweating… it’s not a pretty sight.
Anyway, things went fairly well. I was really nervous at first, but it got easier after the first couple of products.

I’m actually REALLY excited about the products in my shop. They’re all wonderful, but one in particular is going to knock your socks off!

Hint: I made an awesome iced soy latte with it for lunch this afternoon!

I also had a peanut butter and jelly sandwich on a Sandwich Thin.

After lunch, I set out for baking supplies. I have a lot of cookies to bake this afternoon!
Instead of driving to the grocery store, I decided to make the trip my exercise for the day. I walked a mile to the grocery store and then a mile home. It was a nice, little walk that got my heart pumping, especially on the walk back!

It was a cold yet sunny day in South Boston.



The walk home was much more strenuous with two huge sacks of groceries. I was sweating by the time I walked home and up 4 flights of stairs to our apartment. It definitely felt like a workout to me!

When I got home from my walk, I chugged some water and snacked on a Red Delicious apple.

I have lots of baking to do! Better get crackin’!

I slept great last night!
I stayed up to watch Lost, so I slept in until 6:15 this morning. (Man, I remember the days when “sleeping in” was noon!) I slept soundly until my alarm went off and easily got out of bed. I feel like I haven’t had a morning like this in weeks!
My breakfast was a delightful bowl of stovetop oats. Guys, I think I am a true convert! The stovetop method really doesn’t take that much longer to make, and the final product is oat perfection!

In the mix:
- 1/2 cup dry oats
- 3/4 cup vanilla hemp milk
- 1/4 cup water
- 1 tbsp hemp protein
- 1 tbsp raisins
- Blueberries
- Scoop of peanut butter

While I find oatmeal to be the best, most filling, long-lasting breakfast, I want to change-up my morning meal a little bit. Besides oats, what breakfasts fill you up and hold off your hunger until lunchtime?
Lunch Preview
I can’t decide which I like better– posting lunch at the end of the day with dinner or posting a “lunch preview” with breakfast?
Today’s lunch is leftover pizza from last night, cottage cheese with fresh blueberries, and a lemon-flavored Larabar, which is my new fav! (I need to update my rankings!)

I love it when Mal cooks dinner for us!
Usually, we cook together, but sometimes we alternate taking on the whole meal ourselves, so the other person can relax. It’s the best when you can sit on your behind and chill while dinner cooks. The only work you have to do is lift your fork and chew!
Mal made a wonderful pad thai meal for us… with a little help from Trader Joe’s. TJ’s sells a box of Pad Thai Noodles and Sauce that takes just 15 minutes to prepare. The only ingredients that you need to add yourself are olive oil, an egg, and your choice of veggies. The box includes rice noodles and some special sauce.

Mal got to test our new wok tonight!

To the pad thai, Mal added sliced red peppers and snap peas to give the meal some addition nutrients and pizazz!

As always, the pad thai turned out excellent! (We’re big fans of this easy-to-prepare meal!) You would have never guessed that it was from a box!
