I’m breathing life into an old recipe, but it’s one that has changed and morphed so much over the years, it’s practically a new oneĀ all together. It’s definitely become a tried-and-true meal that we make again and again, so I just had to share the updated and easier (!!) recipe. I swear, this meal comes together in no time at all, especially if you use pre-cut sweet potatoes, and since it only requires one pan for cooking, there isn’t much clean-up either!

Description

An easy, one-pan recipe that’s perfect for breakfast, lunch or dinner!


Ingredients

Scale

1 Tbsp unsweetened coconut oil

2 medium/large sweet potatoes (1.75lbs pre-cut)

1lb ground beef (can sub turkey or chicken)

1 Tbsp garlic

1/4 tsp cinnamon

1/4 tsp sea salt

45 handfuls of baby spinach


Instructions

  1. Dice sweet potato into small pieces and add to pre-heated large saute pan with oil, garlic, salt & cinnamon. Coat sweet potatoes in oil & spices, cover with a lid and cook on medium for 12-15 minutes. Mixing occasionally.
  2. Once the sweet potatoes are semi-soft, add ground meat to the pan. Break up the meat as it cooks and toss around the sweet potatoes on occasion.
  3. Continue to cook the sweet potatoes and meat until it is no longer pink. Add spinach and cook until wilted. Serve & enjoy!

Directions:

Dice sweet potatoes (peel them if you’d like) into small pieces and then add them to a large saute pan with oil, garlic/onion powder, salt, and cinnamon. Coat sweet potatoes in oil and spices, cover with a lid, and cook on medium heat for about 12-15Ā minutes, mixing occasionally.

When the sweet potatoes are semi-soft, add the ground meat to theĀ pan. (It’s okay if the sweet potatoes aren’t fully cooked; the fat from the meat will help them soften.)Ā Break up the meat as it cooks and toss around the sweet potatoes on occasion.

Continue to cook the sweet potatoesĀ and meat until it is no longer pink. Then, add the spinach and cook until it is wilted.

Remove pan from heat and serve immediately.
