You guys know I’m all about the easy dinner recipes, especially now that I’m a mom. Our little guy doesn’t stay still for long, so I need meals that can be thrown together quickly and effortlessly. And, of course, I want them to be healthy and nutritious, too, which is why I’m so glad that I was able to attend the recent O Organics® ‘Organic for All™ event in Chicago earlier this month.

During the O Organics event, I had the opportunity to meet and watch a cooking demonstration by Annessa Chumbley, R.D. She’s a busy mom who, like a lot of us, has changed the way she eats since having a child. While she prioritizes healthy eating in her home, she truly appreciates food prep as well as cooking “short cuts” and techniques that make her time in the kitchen as efficient as possible.

Here are some of the tidbits that she shared:
- A motivated day starts the night before. Prepping a protein-rich breakfast will add momentum to your day and go a long way to boost your metabolism.
- Prep a protein at the beginning of each week. This will allow you to have energizing food on hand for those unplanned busy moments.
- When you’re cooking, double the recipe to make extra for freezing. That way, you’ll always have a healthy meal on hand!
- Make your own oat flour by adding oats to your food processor for about 60 seconds.
- Try mixing peanut butter into warm maple syrup on the stove top to give additional satiety to pancakes. Mmm!
- An organic meal is like a vitamin on a plate. Fill it with protein and as many plants as possible.

Annessa also shared some of her family’s favorite easy and nutritious recipes, which ALL sounded delicious and look so simple to make. Here are some of the ones that I’ve tried and/or want to make very soon:

After watching Annessa’s cooking demonstration and listening to her advice, I was inspired to create my own “busy mom” recipe. This one for Ground Beef Chili & Rice Skillet comes together in just 15 minutes and only requires 5 ingredients, many of which you can purchase ahead of time to have on-hand for when you need a quick and nutritious meal. This meal also freezes really well, so it’s definitely a recipe that you can save for future use when you’re short on time or just don’t feel like cooking– just defrost and reheat! I hope you enjoy it as much as our family does!
15-Minute Ground Beef Chili & Rice Skillet
Ingredients:
- 16 oz O Organics 85% Lean, Grass Fed, Ground Beef
- 1 can (14.5 oz) O Organics Diced Tomatoes with basil, garlic & oregano in tomato juice
- 1 can (15.5 oz) O Organics Chili Beans in sauce
- 2 cups (dry) O Organics Long Grain Thai Jasmine Rice
- 2 cups O Organics Petite Broccoli Florets
Directions:
Follow microwave instructions to cook rice. Tip: Add a little extra water. (My rice was a little dry when it finished cooking, but maybe it was because I cooked 2 servings at once?)
Meanwhile, in a large skillet on the stove top, cook the ground beef while breaking it up with a wooden spoon.
When the beef is finished cooking, pour in the diced tomatoes and chili beans. Combine with the meat.
Then, add the frozen broccoli florets.
Allow mixture to simmer on medium heat until broccoli is defrosted and warm. Feel free to use this time to clean up your kitchen or scroll through Instagram.
Remove skillet from oven and serve with rice.
And, just like that, dinner is done!
