I just love it so much. And I love it even more as part of a healthy, protein-packed, no-bake treat that I can make in just minutes.
This recipe for No-Bake Lemon Coconut Protein Bars is one that will definitely become a staple in our house. It’s such a simple recipe and you can enjoy these bars in conjunction with a workout or a sweet treat and the combination of protein and healthy fats will keep you thoroughly satisfied.
- 1/2 cup coconut (or vanilla) protein powder (I used SFH Coconut Fuel)
- 1/2 cup melted coconut oil
- 3/4 cup unsweetened shredded coconut
- 2 tbsp honey
- 2 tbsp lemon juice + zest to taste (I zested about 1/3 of a lemon)
- 2 tbsp coconut flour
Directions: Combine ingredients in a mixing bowl. Line a small baking dish with parchment paper. Spread batter inside, using a spatula to flatten. Refrigerate for 45 minutes. Cut into 12 bars and serve immediately!
