• Monday In Meals + Healthy Peanut Butter Chocolate Chip Oatmeal Cookies

    March 22, 2016

Good morning and happy Tuesday to you!

I’m so glad you guys are liking my Monday In Meals posts! They’re fun to write and keep me accountable (so I don’t eat 500 bowls of cereal for dinner), so they might just become a regular/weekly feature on CNC. And, with that, here’s the next edition!

Omelette made with 2 eggs, 1 egg white, broccoli florets, and nutritional yeast + buttered toast + iced coffee with soy milk

Edamame & Mung Bean Fettuccine (<– high in protein) with roasted broccoli, summer squash, and grated Parmigiano-Reggiano

Healthy Peanut Butter Chocolate Chip Oatmeal Cookies (recipe below) + iced coffee with soy milk

Yesterday I had two eggs, salsa, some Greek yogurt, coffee and a grapefruit.

I don’t remember when I last had cereal for breakfast but I do know the cereal was definitely vanilla Chex

    Brynn March 22, 2016 at 6:38 am

Lately I’ve been all about smoothies for breakfast. I prep them at night and then blend away in the morning. Frosted shredded mini wheats are my favorite!

    Tanya March 22, 2016 at 6:41 am

I have the same thing for breakfast every morning: steel cut oats (I make a big batch in the slow cooker and reheat 1 cup at a time) plus a little shredded cheddar cheese, salsa and avocado.

What type of oats did you use in the cookies? Quick or old fashioned?

    Tina March 22, 2016 at 8:20 am

I used quick oats, but either would work! 🙂

    Kuyahejo March 22, 2016 at 6:45 am

nice and simple recipe, can i try it?

Megan @ Skinny Fitalicious March 22, 2016 at 7:07 am

Breakfast yesterday was brussel sprouts with red bell peppers and two eggs whites and a protein pancake with blueberries.

Linz @ Itz Linz March 22, 2016 at 7:15 am

Yesterday I had a bagel with honey walnut cream cheese. I never keep bagels in the house because I feel like they provide no nutritional value, but I had them from a play date I hosted so I enjoyed. 🙂

Karien @ Running the Race March 22, 2016 at 7:20 am

I’ve had the same breakfast most days for the past 20 years: Muesli, plain yoghurt, cinnamon and berries… I don’t think I’ll ever get tired of it – it keeps me full till lunchtime, is healthy and balanced. Love it!

    Heather@hungryforbalance March 22, 2016 at 7:25 am

I’ve been eating single serving pancakes for breakfast lately. So easy and so filling!
I LOVE that hello beautiful cup!

    Sarah @ bucketlisttummy March 22, 2016 at 7:36 am

I Love that “hello beautiful” glass! And yessss to PB Puffins with yogurt. Amen. I think I ate cereal for dinner last week!

Lauren @ The Bikini Experiment March 22, 2016 at 7:53 am

Great cookie recipe. Easy and healthy ingredients. Perfect. I also like Puffins for breakfast or a grab and go snack.

Amber @ Busy, Bold, Blessed March 22, 2016 at 8:17 am

I’m hit or miss with breakfast. Sometimes I’ll have a big hearty egg casserole and other times I’ll just have fruit. Yesterday I just had a banana and 2 clementines. I also quit coffee, so I’ve been enjoying a lot of tea lately.

Linda @ The Fitty March 22, 2016 at 8:36 am

I don’t remember the last time I’ve had cereal for breakfast. I don’t eat carbs! But sometimes I like to have breakfast meals at other times of the day.

    Lesley March 22, 2016 at 8:37 am

Looks wonderful! My intentions are to always meal prep, but I fail every single time!

    Chelsea@RunningWithaWhisk March 22, 2016 at 8:53 am

Yesterday I had two drippy eggs over a bed of sautéed kale and mushrooms. Of course I had an apple on the side. I have been loving loading my breakfast with a whole bunch of veggies lately. Love those healthy no-bake cookies. YUM!

Catherine Cormier March 22, 2016 at 8:56 am

Yesterday’s breakfast was a yummy smoothie bowl! Even though we were experiencing a huge snow storm, I was craving something cold for breakfast!

Couldn’t tell you the last time that I had cereal for breakfast. But, as an evening snack I do enjoy some cereal mix with greek yogurt!

    Sam @ Barrister's Beet March 22, 2016 at 8:57 am

I had some steel cut oats with unsweetened dried Bing cherries from Trader Joe’s w/ pecans and almond butter — mmm!! I’m glad to see someone else shares my love for Puffins : )

    Alana March 22, 2016 at 9:01 am

I had your crockpot oatmeal (made with milk!) with blueberries, 1/2 banana, and chia seeds mixed in. 🙂

    Jen March 22, 2016 at 9:15 am

Breakfast was Trader Joe’s raisin bran (my favorite cereal ever), hemp hearts, and TJ’s crunchy almond butter with whole milk. My current favorite combo.

We eat cereal for dinner rarely, but, since we have a toddler, we eat very early and then by the time bedtime rolls around (10pm), we both have a little cereal for a snack almost nightly, ha.

    Christine March 22, 2016 at 10:35 am

Yesterday I had roasted red potatoes (leftovers), over easy egg, and a slice of Irish soda bread with butter for breakfast – so good! I also bought those Peanut Butter Puffins and I’m always snacking on them! And I love your parm crisp photo with crumbs left where you wrote “almost the end” because no crumbs get left behind, lol

    Taylor March 22, 2016 at 10:55 am

Call me crazy, but I am just not a cereal fan and neither is my husband. I don’t know the last time we even had a box of cereal in our house! I have been loving overnight oats and green smoothies for breakfast lately!

    Traci March 22, 2016 at 11:05 am

I really enjoy seeing your meal posts (meal posts in general). I guess I’m just nosy or I like to get ideas! 🙂

Yesterday I had two fried eggs with some melted muenster cheese on top and a slice of turkey bacon.

Victoria Wade@Minus Thirty Three March 22, 2016 at 11:16 am

Yesterday I started my morning with Edamame and Mungbean spaghetti with ground chicken on it and mustard! We keep a constant stock of the stuff in the house!

Also, Love the Hello Beautiful glass you have! Is that from Chapters?

    Alyssa March 22, 2016 at 11:58 am

Those cookies look so easy and delicious!

    Cindy March 22, 2016 at 12:18 pm

If cereal was healthier, I’d live on cereal! Love it.

    rachel @ athleticavocado March 22, 2016 at 12:23 pm

Those cookies look so good! love that they only have a few ingredients too! I don’t mind eating cereal for dinner if it’s some good quality cereal like pb puffins, they are the best!

Rachel @ Simply Rachel Nicole March 22, 2016 at 3:09 pm

That cobb salad looks so yummy! It has been way too long since I have had one!

Christine (Run Plant Based) March 22, 2016 at 6:52 pm

Peanut Butter Puffins are my favorite snack. I’m in a smoothie rut for weekday breakfast with plant-based protein.

    Bethany March 22, 2016 at 7:37 pm

    Egg oatmeal with almond butter…..everyday!

Nicole (Cuckoolemon) March 22, 2016 at 10:29 pm

    that fettuccini looks AMAZING!

    Patti March 23, 2016 at 6:17 am

I never eat cereal. I just don’t like it. I do occasionally eat oatmeal. I love eggs. Yesterday, though, I had leftover hamburger salad for breakfast. Hey it happens.

    Ruth March 23, 2016 at 10:35 am

Yummy meals! Thanks for sharing the cookie recipe – always glad for new, easy but healthier snacks like that one!

Breakfast this morning: sweet potato “toasts” + eggs + fruit. I used a white sweet potato as a twist on the usual orange one and LOVE it.

And cereal for dinner… not sure when I’ve had it for dinner last but I love having a little bowl for cereal. Because of St. Patrick’s Day, we had fun and got Lucky Charms so I had some for a snack last night 😉
