Oh, boy, do I have a delicious recipe for you guys. This spinach-artichoke dip was a huge hit in our house, and I have a good feeling it will wow your family and friends too. It’s also incredibly easy to make and relatively healthy, unlike some of those store-bought spinach-artichoke dips on the market. Ok, are you ready for this recipe? It’s a GOOD ONE!
Ingredients:
- 12 ounces marinated jarred artichokes
- 10 ounces chopped frozen spinach, defrosted
- 1/2 cup grated Parmesan
- 3/4 cup mayonnaise
- 1/4 cup Silk almondmilk
- 1 tsp minced garlic
- 1 tsp lemon juice
- salt + pepper to taste
Directions:
Preheat oven to 425 degrees F. Using your hands, squeeze as much water as possible from the spinach. Then, combine it in a large bowl with the remaining ingredients listed above. Mix well. (If you’re not dairy-free, feel free to add 1/3 cup of crumbled feta to the recipe. It’s a delicious addition!)
Pour mixture into an oven-safe dish, smooth top with a spatula and then cook for 23-25 minutes or until edges are lightly browned.
Remove from oven and serve immediately.
Time to dig in!
