Oh, boy, do I have a delicious recipe for you guys. This spinach-artichoke dip was a huge hit in our house, and I have a good feeling it will wow your family and friends too. It’s also incredibly easy to make and relatively healthy, unlike some of those store-bought spinach-artichoke dips on the market. Ok, are you ready for this recipe? It’s a GOOD ONE!

Ingredients:

  • 12 ounces marinated jarred artichokes
  • 10 ounces chopped frozen spinach, defrosted
  • 1/2 cup grated Parmesan
  • 3/4 cup mayonnaise
  • 1/4 cup Silk almondmilk
  • 1 tsp minced garlic
  • 1 tsp lemon juice
  • salt + pepper to taste

Directions:

Preheat oven to 425 degrees F. Using your hands, squeeze as much water as possible from the spinach. Then, combine it in a large bowl with the remaining ingredients listed above. Mix well. (If you’re not dairy-free, feel free to add 1/3 cup of crumbled feta to the recipe. It’s a delicious addition!)

Pour mixture into an oven-safe dish, smooth top with a spatula and then cook for 23-25 minutes or until edges are lightly browned.

Remove from oven and serve immediately.

I love serving this dish with thick pita chips and crackers, so you can scoop up a big ol’ bite, but anything goes with spinach-artichoke dip!

This recipe is definitely a winner because it’s delicious and easy to make, but it’s also great because it’s meatless.
