    Here’s Thursday’s food diary! There were lots of delicious eats yesterday!

    BREAKFAST

    Veggie Sausage Egg and Cheese Bake with roasted Russet and sweet potatoes and iced coffee with almond milk

    LUNCH

    Stuffed pepper from Costco – inside was ground beef, rice, and cheese

    Beet salad with crumbled feta and balsamic vinegar

    SNACKS

    Veggie and pita chip tasting plate with cheese from The Laughing Cow + a buttload more of pita chips straight from the bag (Stacy’s makes some bomb pita chips!)

    A few (hundred) handfuls of dark chocolate almonds

    DINNER

    A big salad with the insides of a stuffed pepper and mustard on top

    A vanilla bean Yasso frozen Greek yogurt bar – I received a coupon for a free box

    That has been my favorite snack as well. However, I usually go with hummus over cheese. But I love the crunch and fresh taste!

    You are eating some fabulous meals while being a new momma! I remember the first (blurry) days with Squish were pretty much fried eggs and salad-out-of-the-bag. Yay for good friends!

    I didn’t know costco made stuffed peppers. I usually make my own, but buying them already made sounds way easier! :)

    Great eats, and you look amazing!
    I love the Yasso Coconut bars, I usually take them off the stick, mush up a little in a bowl and top w/dark chocolate chips, hee!

    I saw your insta pic of the greek yogurt popsicles and I MUST try those! They look awesome. Also.. you’re a brave soul for keeping chocolate almonds in the house. I wouldn’t have ANY control.

    I’m going to Costco this weekend and I am putting those peppers on my list. Here is to hoping my local store has them!

    You look like you are jumping right back into eating healthy so yea! Not that you really ate unhealthy while pregnant. Not everyone craves chips like I do, lol!

    Deliciousness! Those peppers look awesome! The greek yoghurt popsicles sound great (had to check out the site, pretty darn good ingredient list!), the coconut should be next on your list!

    That beet salad looks delicious. Random question for you – do you typically roast your beets yourself or do you buy them prepared? I’ve done both but sometimes it can be time consuming and messy. Just curious what you normally do. I often just buy canned and find that those can be just as good in a pinch:)

    Are you wearing a Fitbit or is that your watch? I’ve been eyeing the Fitbit Flex and Garmin Vivofit. Would love to hear if you’ve tried these kinds of bands and if so, what you think! I always wear my heart rate monitor and am wondering if it’s worth the buy.
