    Hi, guys! Happy Friday!

    For those of you who are participating in the April Cookbook Challenge, here’s your chance to win another one of my favorite cookbooks! Actually, you’ll have the chance to win TWO of my favorite cookbooks: Well Fed and Well Fed 2! (Here’s my review of the original Well Fed.)


    This week, I made Shepard’s Pie from Well Fed with mashed cauliflower (instead of potatoes), ground beef, carrots, and onions, and it turned out so well. I actually added some peas too!

    This dish had so much flavor, and it was definitely an awesome variation of your usual Shepard’s Pie. I already want to make it again next week!

    Pumpkin chocolate chip muffins from against all grain…they r so good! I freeze them and take one out in the morning when it thaws I have it with almond butter smeared on top! Yum!

    For Passover, I made a matzah pie recipe with dandelion greens, cheese, and tomatoes from ‘The Jewish Holiday Cookbook.’ I especially love cooking from this cookbook because it’s a family tradition!

    I made carnitas bowls with pork shoulder, cilantro lime rice, black beans and corn salsa. It was from a blog and not one of my cookbooks, but it was so good. Definitely a keeper!

    I made a recipe adapted from the bon appetit on my shelf- a brussels sprouts and kale salad with toasted almonds and a meyer lemon viniagrette, was awesome :)
