Hi, guys!

Check out my recipe for Sweet Mint Limeade over on the Wayfair IdeaLounge! It’s one of my new favorite juices and it just screams warm weather!

And I love that it only requires 4 ingredients, so you can whip it up in a matter of minutes! (Ok, now I have a major craving for this juice. I might just need to go make myself one!)

Some eats from today”¦

Breakfast

Breakfast ended up being eaten in two parts today. First, I made myself some toast with almond butter and banana slices on top. On the side, I had a container of Greek-style coconut milk yogurt. It seemed like a nice, balanced meal until I tasted the coconut milk yogurt. Eh, not a fan. In theory it sounded delicious: Greek yogurt made from coconut milk? It seemed like it was right up my alley, but the taste and texture just wasn’t for me.

I hate wasting food, so I mixed the yogurt into a smoothie made with frozen peaches, almond milk, and a handful of fresh baby spinach, which was an awesome decision. Mmm!

Lunch

A few hours later, I whipped up an egg sandwich with ham and Light Creamy Swiss from The Laughing Cow on a toasted, buttery English muffin.

FYI: The key to really delicious egg sandwiches is butter””on your English muffin for sure and to cook your egg, unless you cook your egg in leftover bacon grease, which also tastes incredible.

Random side note: I can’t believe I avoided butter in my diet for so many years. Not kidding, it was probably a good 15 years that I wouldn’t add it to my food or cook with it. Growing up a friend’s mom told me butter would go right to your butt and make you fat, so I always avoided it. Oooh, how things have changed in recent times!

Anyway, back to lunch”¦

I ate my egg sandwich at my desk while Murphy stared it down. I swear, this dog acts like we starve him!

Now, I am snacking on cantaloupe as I blog”¦

And then I’m taking Murphy for a long walk and then making dinner. No CrossFit tonight. I’m exhausted, so my plan is to chill out and relax on the couch tonight.
