• No-Bake Vanilla Cake Batter Bars

    April 1, 2014

I had a little fun in the kitchen yesterday afternoon and made some delicious No-Bake Vanilla Cake Batter Bars. I love that I didn’t even need to turn on my oven!

    No-Cake Vanilla Cake Batter Bars

Besides being a no-bake recipe, these bars only require four ingredients—thanks to Nikki’s Vanilla Cake Batter Coconut Butter.

And making these bars is seriously a piece of cake: Just mix all of the ingredients together, spread in a pan, and refrigerate for about an hour. Easy as that!

You really must try these bars. Each bite is a sweet taste of crispy vanilla cake.

    With chocolate sprinkles!

The best part about this recipe is that it’s easily customizable. You can make it with any kind of coconut butter you want (Chocolate Hazelnut Brownie?) and, of course, change up the color of the sprinkles. Don’t you think rainbow sprinkles would be a ton of fun? Or crushed up Oreo cookies? Oooh, so many delicious ideas!

    No-Bake Vanilla Cake Batter Bars

    1. Scoop coconut butter from jar into a large microwave-safe bowl. Soften coconut butter by microwaving it for 60 seconds (remove from microwave and stir after 30 seconds). Be careful not burn the coconut butter.
    2. Once coconut butter is softened, add cereal, honey, sprinkles, and sea salt to the bowl and mix together.
    3. Line a 9” X 9” baking dish with wax paper and then evenly spread mixture inside. Flatten top with a spatula.
    4. Refrigerate for at least one hour. Cut into bars and serve immediately.

    Makes 9 bars

P.S. Interested in purchasing some Nikki’s coconut butter? Here is a little incentive! Nikki’s recently introduced a new flavor (Pistachio Macaroon), so if you use code ‘pistachio’ at checkout, you can get 15% off your entire order!

It’s been so longn since I’ve enjoyed coconut butter! And I’ve been having problems fitting good fat in my diet. Thinking maybe a coconut butter-y treat is the thing I need to get my fat intake back to happy? 😉

If I could eat sugar – I COULD NOT have those in my house – they’d be gone in negative five seconds, HOLY MOLY!

    Shelby April 2, 2014 at 12:33 am

These look soooooo good! I have been wanting to make my own healthy bars to take to work, and I won’t eat anything unless it’s sweet. I have also been wanting to incorporate coconut oil into my diet – so win, win!

I can’t wait to try these.

    angela April 2, 2014 at 7:52 am

I really love vanilla but there are so few recipes I really like. I tried yours tough and voila I love it. And the best thing is that one does not need an oven.

Thank you and keep it up!

    Kristina April 3, 2014 at 8:05 pm

I tried to order using the promo code pistachio to get 15% off my order but it didn’t work. Is there a different promo code to try?

    Tina April 3, 2014 at 8:26 pm

I think it expired. It was only good through yesterday. Sorry. I’ll let you guys know when they have another sale!

    Jayne April 4, 2014 at 8:04 am

I ordered some of Nikki’s coconut butter last time there was a sale and it is super hard to get out of the jar with a knife. It crumbles, I know on the jar it says something about warming it up to make it easier to scoop out of the jar. have you experienced that before or do you think it would be a good idea to just heat up the whole jar?
    This recipe looks awesome btw!

    Shannon April 14, 2014 at 12:03 am

Made these tonight with freeze dried strawberries from Trader Joes instead of sprinkles… Yumm! Strawberry shortcake anyone?

    Cindy August 10, 2015 at 9:08 pm

How many carbs are in this? It looks great, but not sure if it’s high in carbs or not.
