• Deconstructed Shepherd’s Pie {Super Easy Recipe}

    Good morning!

    Let’s get right to it because I have a delicious and insanely simple recipe for you guys, and I think you will love it!

    Breakfast

    Yesterday started with a big bowl of pineapple-flavored Greek yogurt with sliced banana and homemade granola. Simple and delicious.

    Lunch

    I broke for lunch around noon and threw together my favorite salad ever: mixed greens with roasted sweet potatoes, goat cheese crumbles, walnuts, and balsamic vinaigrette. It’s the best.

    After lunch, I dug into the Muddy Buddies Chex mix. I started with a small bowl, but then I found myself going back for handful after handful. So much for portion control!

    Snack

    I eventually decided to eat some “real food” instead of filling up on sugar, so I reheated some spaghetti squash with butter and added shredded cheese (Whole Foods “3 Cheese Blend” <–- so good), salt, and pepper. It was so tasty, I actually went back for a second bowl.

    Workout

    When Mal got home from school, we headed to CrossFit. I was so sore from Sunday’s workout (pull-ups when you’re pregnant are like doing weighted pull-ups!), but I figured moving around a bit would make my muscles feel better.

    Last night’s WOD was a good one! The prescribed weight for back squats (225, 135) was pretty heavy for ladies, so I scaled down to 95 pounds. I definitely could have done more weight, but this workout was suppose to be FAST, so I figured 95 was a good balance of weight + speed for me. Wallballs (I used 14 pounds) seemed like they took forever, but I broke them into sets of 10s and just kept trucking along, set by set. I finished in 8:18.

    Dinner

    Last night’s dinner recipe is definitely a keeper! It came together in about 20 minutes, called for only 3 (!) ingredients, made a good amount of leftovers, and was healthy and delicious. Basically, it was a winner in all categories!

    Deconstructed Shepherd’s Pie

    Ingredients:

    • 1 bag of Trader Joe’s Vegetable Melange (or similar 16-ounce vegetable medley)
    • 1 pound ground beef
    • 1 bag of Trader Joe’s Garlic Potatoes with Parmesan Sauce (or similar 16-ounce frozen potatoes)

    Directions:

    1. In a large skillet, break up ground beef with a fork and cook until 75% fully cooked.
    2. Add potatoes and vegetables to skillet. Cover and cook for approximately 15 minutes, mixing occasionally.
    3. Once everything is cooked, remove from heat, and serve immediately.

    So easy, so delicious! This is a great weeknight meal, especially if you’re an evening exerciser and always come home starving for a satisfying meal.

    After dinner, I enjoyed a couple of snickerdoodle-caramel chip cookies that Kerrie so kindly left for me at CrossFit last night. She is a good friend.

    And yesterday’s 24 Days of Togetherness was drink eggnog together, so that’s what Mal and I did last night while we watched Safety Not Guaranteed.

    Has anyone seen this movie? We randomly found it on NetFlix last night and decided to watch it because April, Nick Miller, and Pete (we watch way too much TV) were all in it, and they’re some of our favorite actors. It was a really great movie, and I liked it a lot more than I thought I would!

    Health News & Views

    When the holiday season rolls around, it’s always more difficult to stick to my regular workout routine. The weeks leading up to the New Year are always jam-packed with all sorts of obligations–from parties and other get-togethers to shopping and even baking sugar cookies. Of course, most of these seasonal responsibilities are a lot of fun, but they don’t leave me much time for exercise.

    Even though I might not be able to work out as much as I typically do, fitting in even a few workouts and moving as much as possible is better than nothing at all. That said, here are 3 ways to burn some serious calories–without even really trying–during the holiday season!

    Question of the Day

    If you could pick any time in history to travel back to, when would it be?

    I would absolutely, 100% pick the mid-to-late 1980s. I loved the music, fashion… basically everything about the time period. I was just a kid back then, and I always wished I was older so I could fully enjoy the 80s.

    That is my kind of meal- throw it in a pan and scoop it in a bowl. Amen sista. Also, I seriously cannot be in the same house as that chex mix stuff. I cannot stop eating it.

    Time period- 1940s, pictures of my grandparents falling in love in their young 20s during that time period give me chills, it looks so romantic and classy.

    If I could go back to any time in history….hmmmm. I think I’d go back to the 60’s. Seemed like a great time period where lots of pretty powerful thing happened. On the plus side, no social media to make us feel like we’re always “on call” but on the negative side, no healthy living blogs!

    Hmm, I would probably go back to the mid to late 1800s. I love that time in our history and I think the dresses are so beautiful.

    That’s such a tough question!! I’ve always loved the beautiful dresses and old timey clothes they wore waaaaay back when, but realistically, I think going back to the 50’s or 60’s would be cool, I’d love to experience the things my parents got to experience when they were my age :)

    70’s. My favorite fashion look for sure. I am so type A that I could use a little laid back peace love and happiness in my life.
    That Shepard’s pie looks delish! I am all about quick weeknight recipes. If its easy to make and delicious you are so much more likely to cook at home which is 99% more likely to be healthier than eating out.

    I’ve been obsessed with the Victorian Era for over a decade now so that’s definitely where I’d time travel to!
    Then the 1980’s to have some vintage John Stamos.

    I would probably travel back to college. That is where I met my husband and I just remember the feeling of enjoying every moment and those “grown up stresses” weren’t there :) but honestly even though this has been a tough year I am pretty happy with where life is right now!

    I have NO control when it comes to Muddy Buddies…SO good but so dangerous! my cousin makes it every year and gives it as a gift to everyone on Xmas Eve. It’s always so good and definitely a favorite!

    That meal looks too easy and too good! I am so overdue for a TJ trip and need to stock up.

    I would definitely go back to the 40’s/50’s. I love swing dresses, I love the simplicity of life back then, everyone seemed to be courteous to each other and you could actually talk to strangers….
    (remember when ALL stores were closed on Sundays? I really miss that, I think especially these days when everyone is ‘plugged in’ 24/7; a day that makes you slow down and enjoy a simple day is so needed!)

    You had so much delicious food yesterday! A lot healthier than a lot of pregnant people I know in real life haha.
    I am SO glad I discovered the 24 Days of Togetherness last year. My husband and I have had so much fun with it over the last 2 seasons. Friday was Cook a 4 Course Dinner and it was a blast!

    I hear ya on the pullups when pregnant!!!! At 25 weeks, stringing 10 together is a miracle and 5 is now the norm! I keep telling myself that if I can safely keep it up for the next 15 weeks, that HOPEFULLY a bar muscle up will seem like nothing once this little girl is here, ha!

    I would have to agree with you on the era. I was not even born in the 80’s but I love everything about the decade! I LOVED the hair and actually still get perms because I love the look so much! Looks like you had some really yummy eats yesterday!

    I love this meal! I am always on the lookout for nutritious, fast dinners for during the middle of the week! I think it would be fun to see what the 20’s would have been like. Before the Great Depression in 1929 though.

    I LOVED that movie. It was really clever and original. I loved how you didn’t know if he was nuts or telling the truth until the very end.
    If I could go anywhere in time, I’d probably go visit Jane Austen during her early writing days. Yep. I’m a literature nerd. Or, I’d go to 1940’s New York and take up swing dancing. Or 1920’s New York to learn the Charleston. Dances were so much better back then. Why and How did we get stuck with twerking?

    Oh damn, that’s a killer workout! Burpees and wall balls are 2 of my 4 “CF horsemen of the apocalypse”. (The other two being box jumps and HSPU.)

    If I could, I’d go back to the 70’s. The fashion, the music, the politics. It was a fascinating part of history.

    I just made the deconstructed shepherd’s pie last night and it was delicious! Thank you! I added some garlic powder, salt and pepper to spice it up a bit. It was perfect after a long day at work (it took like 20 mins total to prepare) and it warmed me up from the snow we got in DC last night. Thanks again and happy new year!
