Heyyyy!

So remember that amazing Mushroom and Gruyere Quiche that I was raving last week? Well, it was delicious (obviously), and I originally got the idea to make it from my friends at Whole Foods, who are spotlighting all kinds of mushroom varieties for the holidays.

Mushroom and Gruyere Quiche

Ok, so this recipe”¦ I love, love, love it! I made it for the first time a couple of weeks ago and then again last week because I enjoyed it so much. The mushrooms add a wonderful texture and “meatiness” and the Gruyere has a strong, bold flavor that just can’t be beat. It’s one of my favorite cheeses ever. Mmm!

I’m also really impressed with how this recipe turned out. I guess I always just assumed making a quiche was kind of complicated and required a zillion eggs, but this one was incredibly simple to make and only called for two eggs. Really!

Even though this quiche was already super easy to make, I made it even easier the second time around. Here’s how!

  1. Instead of using a variety of mushrooms and slicing them by hand, I bought a package of sliced mushrooms from Whole Foods and just tossed them in a mixing bowl along with the onions, olive oil, salt, and pepper. I used a 16-ounce package of mushrooms, and it seemed like the perfect amount.
  2. I saved time (and water + soap) by reusing the bowl that I mixed the mushrooms and onions in to whisk together the cream, eggs, and thyme. I also used dried thyme instead of fresh, so I didn’t need to chop it up. FYI: I used one teaspoon of dried thyme.
  3. Shredding the Gruyere cheese by hand was the “hardest” and most time-consuming part of making this quiche, so the second time I made it, I used a Shredded 3 Cheese Blend from Whole Foods, which was just as delicious!
  4. Ok, the final step of pouring the ingredients into a pie crust and popping it into oven couldn’t get much easier, but the photo made a nice, square image for this post. Haha!
