Good morning! Anyone else working a half day today?
CNC is closing early today and its two employees (Murphy and me) are spending the rest of the afternoon cooking, cleaning, and packing in preparation for our journey home to spend time with our families over the next few days. (Oh, Mal is coming too.)
Let’s do a quick recap of yesterday’s eats, so we can talk about “spirit dogs.” (I know. You’re super excited.)
Quick and easy breakfast: two waffles with almond butter and a little bit of maple syrup + a sliced pear on the side. Easy, delicious, nutritious.
And I enjoyed a homemade almond milk latte!
Mid-morning, I made some Stuffed Cinnamon Cream Cheese French Toast with maple syrup for an upcoming post that I am writing. Of course, I needed to sample the recipe.
After that, I headed to the gym to do my favorite treadmill workout ever. I planned do the running workout, but at the last minute, I decided to do the walking one because I remembered how hard it was. If you don’t hold onto the siderails, it’s really challenging!
Have I mentioned how much I love these Cord Tacos? Because I do.
When I got home from the gym, I made a salad with goodies from the Whole Foods salad bar, romaine lettuce, and balsamic vinaigrette.
After lunch, I ate a ridiculous amount of trail mix. I seriously ate half the bag. Why is trail mix so good?!?
Mal and I went out for dinner last night””nothing fancy just grabbed a meal at a local bar/restaurant. (Neither of us felt like cooking.)
We started with fried pickles, which were served with a delicious spicy thousand island sauce.
And then I had the French onion soup for dinner, which was also really good.
Mal and I ended up bumping into some of our CrossFit friends at the restaurant, so we hung out for a couple of hours and chatted with them at the bar.
When we got home, I finished off the evening with some Moose Munch. (I can’t have this stuff in the house. It’s like I’m on a mission to EAT IT ALL.)
Ok, so sprit dogs”¦
Anyone else watch last week’s episode of Parks & Recreation? If not, April tried to match each Parks & Rec employee with the dog that was most like them (aka “spirit dog”). Donna actually ended up being a cat because not everyone has a spirit dog.

When the episode was over, Mal and I started talking about our spirit dogs. I immediately said he was a Boston terrier because they’re active, high-energy, and love people.
Mal said my spirit dog is a pug because I love food so much. Haha! He’s right, and I’m also semi-neurotic, obsessive, and goofy just like pugs. There are a few pug characteristics, however, like being super lazy (I can’t sit still) that don’t totally fit me, but I think a pug could be my spirit dog. And, of course, I love them so much.
