• Life Lessons from the Boston Marathon Race Director

    October 30, 2013

    Hi, guys!

Here’s a little preview from our family photo shoot the other day. I can’t wait to see all of the pictures once they’re done!

And here are the rest of my eats from yesterday—lots of delicious ones!

Yesterday’s lunch was a couple of leftovers from the fridge: Whole Foods Sonoma chicken salad + loaded mashed potatoes. Yum!

I finished off lunch with the last bit of my Mom’s Apple Crisp. I can’t have this stuff in the house without wanting to eat every last bite!

Mid-afternoon, I did a little baking. Hello, chocolate chip cookies! Recipe coming soon!

Dinner was so cheesy! We had Parmesan Crusted Chicken and scalloped red potatoes made with Gruyere cheese.

For the Parmesan Crusted Chicken, I reduced the mayo by half and added garlic powder and black pepper, and it turned out so well. I will definitely make this recipe again. The scalloped potatoes were incredible, and I also want to make them again ASAP!

    Health News & Views

Recently, I attended the Runner’s World Festival & Half Marathon where I had the opportunity to hear keynote speaker, Dave McGillivray, director of the Boston Marathon and running philanthropist, talk about some of his accomplishments.

His presentation, titled  “Defining Moments,” could have easily been a chance for him to brag about his life achievements, but McGillivray is an incredibly humble person and used it as a teaching opportunity. Even still, I left his talk totally in awe of what he’s done with his life and feeling even more inspired to make some positive changes in my own. That said, here are a few pieces of wisdom and life lessons I took away from his presentation.

Kelly @ Kelly Runs for Food October 30, 2013 at 1:58 pm

Chocolate chip cookies, every time! They’re definitely a favorite of mine. I do love apple crisp though 🙂

Hillary | Nutrition Nut on the Run October 30, 2013 at 1:58 pm

Lauren @ Peaks and Passports October 30, 2013 at 2:04 pm

    Allie October 30, 2013 at 2:15 pm

easily apple crisp! as long as there is ice cream loaded with is.. such a cute family picture… what a beautiful family!

Lauren @ Focused To Be Fit October 30, 2013 at 2:24 pm

Yummmm!! For sure, cookies, and I suppose scalloped, although I’m not a big potato person. However, I may be convinced with some gruyere in the mix! 😉

    Tina October 30, 2013 at 2:44 pm

Gruyere is the best. I love it in a weird way.

stephanie @ healthy, happy stephanie October 30, 2013 at 2:30 pm

I love potatoes in any form!

    Megan October 30, 2013 at 2:32 pm

Do you have a recipe for those potatoes? They look yummy!

    Tina October 30, 2013 at 2:43 pm

No, sorry, they’re from Hingham Beer Works. I’d just throw a ton of butter and cheese, some bacon, and a few scallions into some mashed potatoes to recreate them! 😄

    Taylor @ Single-tracked Mind October 30, 2013 at 2:32 pm

Chocolate chip cookies! I’d take both loaded mashed potatoes and cheesy scalloped potatoes.

    Jessica H. October 30, 2013 at 2:39 pm

    Chocolate chip cookies

    Mashed potatoes 🙂

    Justeen October 30, 2013 at 2:42 pm

Apple crisp is one of my fall favorites (I love your Mom’s recipe), but chocolate chips cookies will always by my number 1!

    Jackie October 30, 2013 at 2:43 pm

Both kinds of potatoes! How can I choose!?!?!

Ashley @ My Food N Fitness Diaries October 30, 2013 at 2:45 pm

    Cute photo!

As much as I love both chocolate chip cookies AND apple crisp, chocolate always wins, so the cookies it is. 🙂 And I’m a fan of pretty much any kind of potato dish, but the loaded mashed would probably be my favorite over the scalloped.

    Melissa October 30, 2013 at 2:58 pm

The family photos look great and I love your sweater! Also, your mom’s apple crisp looks so yummy, I love anything with cooked apple, it really brings out the sweet flavor!

    Annie @ herightfit October 30, 2013 at 3:02 pm

Looking forward to those chocolate chip cookies. I’m halfway through a paleo challenge so I’m just full of cravings!

    Ashley October 30, 2013 at 3:04 pm

Oh that is a TOUGH one — right now in the middle of fall, I’d probably HAVE to go with apple crisp!

    Holly October 30, 2013 at 3:30 pm

    Cookies for sure!
Ps..I read this today and thought of you! http://www.seriouseats.com/recipes/2013/10/the-best-english-muffin-pizza-recipe.html

Yummmmm! Thank you for sharing! 😄

Elizabeth @ Positive Change October 30, 2013 at 3:49 pm

Great looking photo! I would go with apple crisp, but that is a very hard choice! 😉

    Nicole October 30, 2013 at 4:12 pm

Definitely apple crisp. I have made a gluten free baked apple the past two nights for dessert. Super easy and super delish.

    Shel@PeachyPalate October 30, 2013 at 4:13 pm

I’d have to go cookies!!! Which would you choose? Those cookies look lovely and chunky!

    Abi@AbsofSteel October 30, 2013 at 4:15 pm

chocolate chip cookies!!!!!!! but i’d gladly eat both 😉

    Mary October 30, 2013 at 4:35 pm

Your sister looks great, their son is adorable!

meredith @ The Cookie ChRUNicles October 30, 2013 at 5:04 pm

I love apple crisp and cookies. I don’t think I could pick one although I will always choose chocolate desserts over apple crisps and pies.

    megan @ theveryhungryrunner October 30, 2013 at 6:23 pm

Love the colors you and your family chose for your family pictures. They are so much better than the tacky white shirts with denim! haha. Adorable!

Kate House October 30, 2013 at 7:16 pm

Loved your piece on health.com! Thanks for the reminder to be proud of your achievements, but to keep looking forward. I always enjoy your posts!

    Tina October 30, 2013 at 7:20 pm

    Thank you! 😄

    Tricia October 30, 2013 at 7:46 pm

I’ve made a similar recipe to the chicken one you posted that is also really good! http://www.lifeofmeg.com/2012/05/skinny-greek-yogurt-chicken.html

    Tina October 30, 2013 at 7:49 pm

Ooh, yum! Thanks for the link! 😄

    Elisabeth October 30, 2013 at 8:12 pm

I used to make that chicken recipe almost every week!

    Tina October 30, 2013 at 8:16 pm

    It’s soooo good!

michelle kim October 30, 2013 at 11:56 pm

Apple crisp (but with a huge scoop of vanilla ice cream).
And loaded mashed potatoes (though your scalloped potatoes look friggin’ amazing!).

    Courtney @ Don't Blink. Just Run. October 31, 2013 at 6:09 am

That family photo is great! And I’d definitely have to go with chocolate chip cookies on this one.

    Jan @ Sprouts n Squats October 31, 2013 at 6:49 am

Chocolate chip cookies all the way for sure!! I love your jumper in that photo, is it J.Crew?

    Tina October 31, 2013 at 8:06 am

Is a jumper a sweater? If so, it’s from StitchFix! 🙂

    Livi October 31, 2013 at 7:41 am

apple crisp all the way! gooey, crisp, cinnamon-y….seriously the BEST!

    Allyssa October 31, 2013 at 9:42 am

Oh that’s a tough choice but I think I would have to go with Chocolate Chip cookies and the mashed potatoes! By the way, I love that sweater you wore for your family pictures! Very cute!

    Amelia October 31, 2013 at 12:14 pm

Apple crisp all the way…although I can house some chocolate chip cookies. I’ve been trying different crisp recipes too. This last weekend was ginger snap apple crisp and it was almost perfect. It could have used a few more ginger snap. Random fact: Apple crisp is also know as apple crumble but that’s mostly the name used in Canada. At least that’s what I learned recently… 🙂

I can’t get too excited about potatoes after thinking about apple crisp or chocolate chip cookies. Meh…potatoes.

Tempie @ The Texas Peach October 31, 2013 at 4:09 pm

Scalloped potatoes are actually the only style of potatoes that I don’t like. Mashed potatoes are total comfort food to me.

    Erika October 31, 2013 at 7:04 pm

I like both, but the apple crisp would need to be served with vanilla ice cream.

Shoot, I’d choose both styles of potatoes too! haha

Niki Mosier November 1, 2013 at 12:30 pm

I’d choose both kinds of potatoes too! For sure!
