    Happy first day of summer, friends!!!

    I love summer. A lot. I also love today because it’s the longest day of the year. I just really enjoy having those extra hours of sunlight each day. It’s kind of cool when you look outside at 8:30 at night and it’s still kind of light out, right? I feel like I never want to sleep at this time of year!

    Eats & Treats

    So, I’m still feeling out how food is going to fit into CNC, but I snapped a few pics of some of the delicious things I’ve enjoyed over the past couple of days. Here are some highlights:

    Sweet potato puffs!

    These ones are actually from Alexia. As you might remember, I’m obsessed with the sweet potato tots from Trader Joe’s. I always stock up on them when I shop there, but I haven’t had a chance to get there lately, so I bought these Alexia ones at Stop & Shop the other day.

    The Alexia sweet potato puffs are really tasty, but different from the ones from Trader Joe’s. The Alexia sweet potato puffs are a little smaller in size and crispier. They also seemed less greasy and more “puffier” than the ones from Trader Joe’s. I actually think I like the ones from TJ’s better, but these are definitely a delicious option. I will surely buy them again!

    Also delicious… Passion Fruit iced tea from Starbucks!

    I’m taking a break from iced coffee for a little bit (trying to heal my colon), so I’m giving iced tea a whirl. The Passion Fruit (with a half pump of sweetener) is really good. It might just be my new summer drink!

    Freshly pressed green juice!

    I’ve been loading up my juice with lots of leafy greens (with apple and orange or lemon) with the hope of getting some iron into my system to prevent anemia. My insides have been bleeding (a lot) for almost 3 months straight now, so I’m doing everything I can to keep my levels up. Juice seems to be a great way to get a lot of vitamins at once without a lot of “roughage.”

    Peanut Butter Cup cupcake in a jar!

    Oooh, yes! My friend Kerrie got me this for my birthday yesterday, and holy frickin’ yum! Decadent chocolate cake with peanut butter and chocolate buttercream, drizzled with peanut butter and topped with Reese’s peanut butter cups. Whoa. Happy birthday to me! I love that it’s a cupcake in a jar. Why is everything more adorable when it’s in a jar?

    Happy belated birthday! Looks like you had fun celebrating. Sweet potato tots are soooo good! I love the Starbucks iced tea with a splash of lemonade. Soooo good! Happy summer! Yay!

I feel like I never want to sleep at this time of year!” –> ehh, I can’t pretend I’m a huge fan of the longer daylight hours. It interferes with my granny sleep schedule…and then I’m sleep deprived…and then I’m cranky. :P

    All of your food looks fantastic! I’ve only had sweet potato tots at Sonic, but I’d love to get my hands on some healthier versions. :)

    2) aren’t fried potato puffs that are inevitably loaded with salt, fat and calories the antithesis of healthy living?

    Summer is the season to do things in or near cold water!

    And you should try the Starbuck’s Hibiscus chiller (if you haven’t already). I really like that one, especially when it’s warm.

    I too LOVE the passion tea. Try it with a pump of raspberry (if you haven’t already, that is)– it is SO good. When/if coconut comes back around it’s fabulous with a pump of coconut too!

    LOVE tater tots! Just picked some up the other day at the grocery store and wasn’t a fan (grocery store brand). I didn’t know TJ’s makes them so I’ll have to pick some up!

    Summer is the season to get outdoors! So many things that we do inside can be done outside and I think it’s so incredibly refreshing and recharging to eat, do work, or read a book outside :)

    It’s blowing my mind it’s already Summer. Craziness.
    Summer is time for fresh berries and drinks outside with friends.

    It makes me feel better that it’s technically only the first day of summer. Typically I think of the first day of summer on Memorial Day weekend, so to me, it has already seemed like summer is FLYING by which makes me sad! I love summer, so I’m glad to hear it’s only beginning. :)

    Summer is the season to… Travel, drink lots of smoothies, eat ice cream, go swimming, stay up late, go hiking, barbecue, eat lots of fresh fruit.

    That cupcake thing is adorable. Do you know where I can find a recipe?
    Also, Murphy really makes me want to adopt a pug. I used to work in a vet clinic, and one day a lady dropped her pug inside the door with a note saying that the dog was diabetic and she “couldn’t handle” taking care of her. It was my responsibility to give the dog her insulin shots during the day and I fell in love with her! She was SO spunky. I had a dog and couldn’t keep her, but the Pug Rescue group took her in. I’m sure they wouldn’t let her go to anything but a good home. Anyway, Murph seems pretty spunky too, so I’m wondering if it’s a pug thing!

    I REALLY need to try sweet potato tots. I plan on making my vegetarian tator tot casserole next week, and I am thinking that I should use sweet potato tots this time! It sounds SUPER delicious.

    Hey Tina! Happy Friday and Happy First Day of Summer! Just curious what you mean about “So, I’m still feeling out how food is going to fit into CNC”. I personally love seeing all of your good eats on CNC. It gives me ideas for keeping my own healthy eating interesting! Hope you keep it coming :)

    Just as a heads up, a high fat diet may help with energy balance as long as you aren’t having excess fat in your stools.

    Whhheee, I love summer. Too bad it is just a few short weeks for us here in the Northeast. :( I love the sweet potato puffs too! Wish I could get my kids to make the switch from smiley fries. :)

    I love that Starbucks tea! I get it unsweetened (it is surprisingly good!) and my 2 year old asks for sips of it and loves it , too!

    I LOVE summer so it is hard to list just one thing, so here are a few…

    Summer is the season to:
    *Catch lightening bugs
    *Sit on the porch/patio and watch the sunset
    *Eat popcicles

    Oh. My. God! That cupcake in a jar looks AMAZING, & I’m not even a fan of chocolate cake. Have you tried Alexia’s waffle fries? They’re super good. They’re seasoned & crispy & just delicious lol.

    Hi – new reader here. I don’t know what exactly you mean by saying that your insides are bleeding, but I thought I’d share my trick for increased iron: cook everything in a cast iron pan. Seriously works. I tend toward anemia and started cooking in cast iron (everything – even oatmeal) and have had no low iron issues since – even while pregnant! Good luck with your health!

    I’m sorry to hear about your iron deficiency. I had it for over a year, went to a number of specialists to figure out where my colon was ruptured…they never figured it out. I was running a lot at the time and ate a flexitarian diet. I ate meat about three times a month and red meat maybe once a month. I was also a green juice freak!! I love it and it always makes me feel wonderful. However, for the long term, red meat is really what helps. Besides liver, nothing has a richer source of vitamin b12 which is what you really need to absorb the iron. I would definitely up your red meat meals, and see if it makes you feel energized?

    Oh and the reason I got bloodwork was because my running times were suffering, I was extremely lathargic in the morning and mentally foggy. I didnt feel like myself and got slightly depressed. Once my iron stores were up, I had loads of energy, felt smarter(ha!) and my running times were even better than before.

    If you are looking for anothere coffee alternative… I get 1/2 passion iced tea and 1/2 very berry hibiscus refresher from SBUX. Seriously… it’s amazing! I pretty much don’t drink coffee during warm months b/c I love this so much. The hibuscus refresher is too sweet for me by itself, so the passion iced tea cuts the sweet (and some calories), plus just tastes fantastic!

    Run outside, drink margaritas, go to the beach, watch baseball, have cookouts, take naps, eat ice cream (let’s face it, that’s an all season activity), eat lots of fresh fruit, spend time with friends, slow down and enjoy life

    I really want that cupcake in a jar…my bday is July 20th BTW. :)

    I may have missed it somewhere, but have you ever done a post about what type of juicer you have or have used in the past? I’m interested in getting one, but am totally overwhelmed with the different types. I have Crohn’s (extremely mild) and am hoping to add some juicing into my diet to get some extra nutrients!

    Try the iced Passion tea with lemonade – it is delicious!! I usually make the tea at home myself, and add freshly sliced lemons! Soooo good

    I lived off the Passion Iced Tea at SB’s when I taught at a school that had a SB acros the street (so dangerous!!) and was pregnant, so coffee was kind of out of the picture.

    Hey, Tina!
    You can actually make that tea at home. I worked at Starbucks all through college. :)
    It doesn’t actually have passion fruit- it’s hibiscus FLOWERS! And orange peel, lemongrass, and a bunch of other delicious things. :) it’s a Tazo tea, so just look for Passion, and you can keep some at home! :D
