Confession: Late at night, I read IBD forums. I usually end up in a black hole of posts about people’s experiences with ulcerative colitis and Crohn’s. I spend hours and hours reading and clicking links to random websites, research studies, blogs, and whatever else turns up, and I don’t think I’ll ever stop until I am cured.

Most of the time, browsing the internet just bugs me out and worries me even more about my disease, but sometimes I find helpful and inspiring information. One of these times was when I stumbled upon Meghan Telpner’s website a few months ago.

Meghan was diagnosed with ulcerative colitis and then later Crohn’s in August 2006. She spent 3 years doing what she had been told by doctors, but not getting any better. Eventually, Meghan decided to take responsibility of her own health: “It was time to start breaking the rules,” she writes. Meghan took a leave of absence from her job and committed herself fully to healing the disease and making it go away.

One of the most important aspects of Meghan’s journey to health was “undiet-ing” her diet by going against conventional dietary recommendations, which was the main motivation for her book, UnDiet.

UnDiet starts with Meghan telling her own story of how she healed from an autoimmune disease that her doctors told her was incurable. And then she breaks it down:

  • why calories don’t count
  • how to eat real food
  • how to optimize your time in the kitchen
  • how to kick cravings

Since IBD isn’t just a food thing, Meghan also brings in a bunch of experts to help support her chapters on lower impact living, natural beauty care, and all about the little lifestyle changes we can make that have big and wonderful results. The book also includes a full 7-day meal plan, over 40 plant-based and gluten-free recipes, along with an 8-week transition program.

I found UnDiet incredibly inspiring because of my own experience with ulcerative colitis and journey to health. I finished reading UnDiet feeling motivated and confident to take control of my health and, as Meghan suggests, create my own rules to figure out what works best for me.

Meghan shares a number of delicious and nutritious recipes in her book, including one in particular that I have been raving about since my first bite: Almond Power Cookies.

Almond Power Cookies

Makes 12 cookies

Ingredients:

  • 1.5 cups ground almonds (I used almond meal)
  • 1/2 cup pecans, chopped
  • 1/3 cup shredded dried coconut
  • 1/4 maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup dried cranberries (optional)
  • 1/2 cup dairy-free chocolate chips or cocoa nibs (optional) (I used regular chocolate chips)
  • pinch of sea salt

Directions:

  1. Preheat oven to 350*F (180*C)
  2. Mix all ingredients together.
  3. Take about 2 tablespoons of dough, roll into a ball, and then flatten on parchment-lined baking sheet.
  4. Bake until aromatic and slightly browned at the edges, about 20 minutes.
  5. Transfer to cooling rack. They will crisp up as they cool.

This recipe was super easy to make””just throw all of the ingredients in a mixing bowl, roll batter into balls and flatten on a cookie sheet, and bake in the oven. Simple as that. And they turned out so well””crunchy on the outside, soft on the inside with pecans, dried cranberries, shredded coconut, and chocolate chips mixed in. Holy yum indeed!
