• Ginger Snap Pancake & Murphy’s Enthusiasm for Dinner

    Hi, friends! Happy Friday!


    I got home really late from Milwaukee (here’s what I was doing there) on Wednesday night (technically Thursday morning), so I slept in a little and then woke up hungry for breakfast. Our kitchen looked pretty pathetic food-wise (I mean, we were totally out of bananas, which is no way to start the day), so I worked with what we had and ended up with a surprisingly delicious breakfast.

    There were some leftover Sweet Potato Wedges in the refrigerator, so I mixed them with two eggs, cinnamon, vanilla extract, and ground ginger to make a pancake, which tasted almost exactly like a ginger snap cookie. It was SO good. Mmm!

    Ginger Snap Pancake


    • 1/3 cup mashed sweet potato
    • 2 eggs
    • 1/4 tsp vanilla extract
    • 1/4 tsp cinnamon
    • Sprinkle of ground ginger


    1. In a food processor (or by hand), blend together ingredients.
    2. Heat a skillet (medium-low heat), spray with non-stick spray, and pour in batter while shaping it into a pancake with a spoon.
    3. Heat until partially cooked and flip pancake.
    4. Once cooked through, top with syrup, nut butter, fresh fruit or anything else your heart desires.

    Makes 1 large pancake

    Oooh, ginger snap pancake sounds like a good ‘holiday season’ breakfast. My cats come running from a dead sleep when they hear a can opener (they always assume it’s tuna, even when it’s my dinner). It’s kind of fun to get that excited about food; I probably take it for granted because I’m the one feeding myself, not waiting for someone to feed me. 😀

    I love how dogs have their quirks…My dog starts eating out the measuring cup, or wants to, before the food even gets to the bowl also!

    I love Murphy videos, because after I watch it there are usually YouTube suggestions of Murphy videos from when he was a puppy! Puppy Murphy is tooooo cute!

    I was wondering if two ingredient pancakes would work with sweet potato. Can’t wait to try this and add tons of ginger. Yummy!

    I have been on a sweet potato waffle kick lately, and it’s amazing! I smother mine with sun butter and coconut butter (btw try giving coconut butter to Murphy my dog loves it and it’s the cutest thing to watch! )

    I was hoping to get my pregnancy test around Mother’s Day after 2nd ivf cycle, unfortunately it did not work. It was also my first Mother’s Day since losing my baby last October when I was 5mths pregnant. It was a very tough day, emotionally on so many different levels. But I had our mums & family around us today which helped.

    The Murphy clip was funny & made me smile, are u sure he does not have part Labrador in him – I did not realise pugs were so food orientated.
