YUM! Last night’s dinner was so EASY and DELICIOUS, it deserves its own post. It was as simple as brushing on a garlic and mustard mixture and putting the chicken in the oven, and it turned out so well!

Good morning! Happy Hump Day! [image source] Breakfast Yesterday’s breakfast kind of bombed, but it still tasted delicious. I made Plantain Pancakes with Maple Coconut Cream and Toasted Walnuts again, but I was impatient and turned up the heat too high on the stove, so my pancakes stuck to the pan and fell apart.

Some of My Bad Habits

Last night, when I tried to overload the dishwasher for the umpteeth time, Mal stopped me and jokingly said it was one of my worst habits. I know things don’t get properly cleaned if I overload it, but I can’t help myself and just always want to add one more thing.

Good morning! Happy Friday! Last night, I joined a group of CrossFit ladies for dinner at The Fours in Quincy. When Mal and I lived in Q-town, we used to go there all the time, but I haven’t been back in years, so I was excited for a fun night out with my favorite CrossFit ladies.

No Bake Chocolate Fudge Cookies (Gluten-Free)

I’ve whipped up these cookies 3 times already since I first made the recipe this past weekend. They’re so good and so easy to make! These cookies are chocolaty and fudgy with some sweet and salty action going on. And, the best part, they require no baking. Love that.

Hello, hello! The first part of yesterday afternoon was all about running errands. I received my sister’s baby shower invitations in the mail on Tuesday, so I addressed them and mailed them out yesterday afternoon. I also did a little shopping and bought a few things for our trip to Hawaii.
