Breakfast

Yesterday’s breakfast was my beloved French Toast Breakfast Scramble with blueberries mixed in. Oh, how I love this breakfast. I also added a couple of scoops of Teddie peanut butter and drank a glass of iced coffee with breakfast.

Lunch

When lunchtime rolled around, I threw together a bunch of random goodies from the refrigerator. I did a Sunday Cook Up the other day, so I had spaghetti squash, roasted chickpeas, and sautéed mushrooms ready to go. (I also cooked up some Sweet Potato Wedges, hard-boiled eggs, and mashed potatoes.) I topped everything with some fresh pesto from Wegmans and some grated Parmesan cheese. Delish!

After lunch, I had a few pitted dates.

Question of the Day

On the drive to Wegmans the other day, we got on the topic of Chinese Astrology and figured out each of our animal signs based on our birthdays and then read the corresponding descriptions. I was born in the year of the monkey and most of it was surprisingly accurate! I loved that part about practical jokes. I’m always playing pranks on Mal. Haha!

What’s your Chinese Zodiac animal? Is the description accurate?

P.S. Tomorrow is the last day to get free shipping on a FlipBelt with the code cnc303!

I’m a pig. According to this description I’m definitely not like my sign!
“Always seeking fun, Pigs often indulge more than they should. Excessive eating, drinking and smoking can cause sickness. Pigs aren’t very active and, combined with their excessive behaviors, cause them to gain weight.”

I’m an oxen which says I’m responsible, loyal, and am capable of fierce rages, so you never want to get in the way of an oxen. Haha. I agree with some of it, but not a lot of it. =) It’s fun to look at though!
I have GOT to try that french toast scramble. I am looking to switch up my breakfasts!

hmmm i’m a rabbit. some parts of the description are accurate… but i wouldn’t say i avoid conflict. i can be pretty firey sometimes :)

wegman’s is my favorite, i got so excited when i discovered it last year! do they have a certain brand of pesto you got?

Tina January 30, 2013 at 3:56 pm

@Kait – @runkaitrun: I bought some from the Mediterranean bar. It’s really good! :)

I really need to try roasted chickpeas. I’m on a try new foods kick and they’re something I’ve never had. I’m a monkey! Phew. I was a little worried for a second that I was a rooster or something ;)

Rabbit! “Keen, Wise, Fragile, Tranquil, Serene, Considerate, Fashionable, Sneaky, Obsessive.” Sure, I guess I can be that? Fashionable! Haha.

I was born in the year of the horse and for the most part (besides the fact that I have an irrational fear of horses — the irony) the description is accurate! Actually, it’s incredibly accurate.

I am an Ox and as I recall, it is pretty accurate as well.

I am a snake! YUCK! I hate snakes! They scare the living crap out of me!!
But this seems pretty correct… as an Earth Snake…”Earth Snakes always seem to be calm and content. They’re friendly and approachable and believe that they’ll reap great rewards by working hard and relying on common sense.” Cool!

Katie @ Peace Love & Oats January 30, 2013 at 9:00 am

At first I thought, that makes no sense. Not every single person born in one year would have similar personality traits. But I read mine (Rabbit) and it’s pretty accurate!

What’s funny is that until today, I always thought I was the Year of the Rat because I was born in 1984. But as it turns out, I’m actually the Year of the Pig because the Year of the Rat starts in February. Crazy!

I would say that I’m like a Pig sign in the I believe it’s better to give than to receive. :)

Hi Tina,

I am having the same issue as Margaret. The free shipping code does not work for the flipbelt. Any suggestions? Thank you!

Meghan @ After the Ivy League January 30, 2013 at 9:11 am

I love astrology like that, I think it’s so interesting how a lot of it can be true. I was born in the year of the Tiger. “Brave, competitive, unpredictable” hmmm…pretty accurate I’d say!

Jessica January 30, 2013 at 9:18 am

Tried to order the FlipBelt but the coupon code is not working??

@Leanne: @Margaret: @Jessica: I just heard back from Flipbelt and they fixed the issue. Sorry for the confusion!

I’m an ’82 baby – year of the dog! Quite a bit of it’s true for me actually.

Reply

Tina January 30, 2013 at 3:43 pm

@Elisabeth: Mal is a dog too and the description sounded a lot like him!

Lauren @ Eat Like An Elephant January 30, 2013 at 9:46 am

I’m the year of the Tiger. Cool! My husband is Rat…hmmm it says we’re not super compatible (so do our astrological signs, we’re both scorpios) but I think that may be because the descriptions are so similar! Pretty accurate too.

Reply

Becky @ Olives n Wine January 30, 2013 at 9:48 am

I’m an Ox and I think I fit in fairly well with the description – hardworking, stubborn and have great memories. My husband hates the memory part, I can seriously remember every detail of our relationship! Haha.

I’m a Rat (gross) and it’s crazy accurate! Spot-on actually. My fiance is a Snake (also gross) and his is pretty accurate, though i’m not sure I like that he can ‘attract just about anyone he wants’…

I used the free shipping promo code, no problem. It doesn’t show a discount at first but if you go all the way thru the shopping cart (picking the normal rate), it will discount it at the end..before you actually click ‘purchase’
can’t wait to try the flip belt!!

still trying to perfect my scramble! What do you blend your ingredients with before cooking? love the blueberry idea….especially as today feels a little “sping-like” for winter :)

Reply

Tina January 30, 2013 at 11:25 am

While the coconut oil is melting, I mash up the banana in the peel (peel it) and then mix everything together in the pan while it cooks.

I am also a monkey and totally relate to the sign. My husband is a dragon and he matches up pretty well with the descriptions as well. Fun post!

So scary how astrology can be so true sometimes. I am a rabbit according to my birth year and needless to say it hit who i am right on the head. Sometimes I wonder if this is all coincidence or if the stars really do line up differently for people. I have had days where I read my horoscope at the end of the day and sometimes I am surprised to see how closely or off it was. Either way I enjoy astrology because it can take your mind off of the craziness of life for a moment and make you think what if… Also, I think you make your own destiny it is just a matter of getting up and doing something with your life. :)

I identify with the characteristics of my Chinese Zodiac (Rooster or as I prefer at some places, Cock haha) sign much more than my astronomical (Pisces). <3

Too funny–mine is pretty right! According to the description, a horse is “energetic, self-reliant, money-wise, and they enjoy traveling, love and intimacy,” which are definitely true. However, I don’t know if I’m “great at seducing” (bahaha!), but I’m definitely “sharp-witted and impatient.” Let’s say patience isn’t my virtue. ;)
