    Happy Christmas Eve eve! I’m getting so excited for the Christmas fun to begin! I hope you are too!

    Even though it’s a short week (meal planning-wise), Mal and I still managed to spend quite a bit of money at the grocery store. I thought for sure we’d come in under-budget this week, but I guess not!

    Here’s this week’s meal plan:

    • Sunday: Shrimp stir fry with brown rice
    • Monday: Christmas Eve dinner at my grandmother’s house
    • Tuesday: Christmas dinner at my mom’s house
    • Wednesday: Chicken Marbella
    • Thursday: Spaghetti squash with Bolognese sauce <—recipe from Practical Paleo 
    • Friday: Gingery Beef and Broccoli
    • Saturday: Out to dinner

    Hi,

    can I ask a few questions?
    Do you eat a late dinner both nights (eve and day?). My family has a huge dinner late Christmas Eve and a huge 1:00 pm meal the very next day…I’d much rather do a later dinner, but not much choice!

    Another thing, will your chicken/turkey be free range or the “good” stuff? I only have available to me grain-fed, factory turkeys, etc. It will be roasted with skin-on (since family members eat it that way). Thoughts on this? Is this really not a good thiing to eat? It’s all my town offers (long-term).

    Thanks. I would like to ask more questions, but don’t want to push my luck :)

    Ever consider making your own hummus? Super easy. Garlic, chick peas, tahini that I am sure you can get in your area. So much cheaper than purchasing.

    @Kim: I’ve always wanted to try that! You’ve just reminded me that I waste so much money on hummus! Must make my own!

    I’m making Chicken Marbella tonight, too! Do you use the Silver Palate recipe or Cook’s Illustrated? They revamped it without marinating overnight, so just curious. I’m marinating mine all day and used apple cider vinegar instead of red wine because that’s what I had. Hope it turns out ok! eek.
