• Baked Lemon-Garlic Chicken (& fitmixer Holiday Promotions)

    Last night’s dinner was de-lic-ious! And it was SO easy to make! Ok, well, everything you see on CNC is easy to make, but this recipe was especially easy. And delicious! Did I say that already? Ok, you really should just make it!  ;-)

    Ingredients:

    • 3 chicken breasts (~1.5 lbs)
    • 1 tbsp minced garlic
    • 1 tsp garlic powder
    • 1/4 cup lemon juice
    • 2 tbsp olive oil
    • 1/4 tsp salt
    • 1/4 tsp pepper
    • 2 tbsp minced cilantro

    Directions:

    Combine all ingredients in a large Tupperware container or plastic bag and mix/shake to coat chicken.

    Allow to marinate 3-4 hours.

    Bake on 375 degrees F for approximately 30 minutes or until chicken is cooked all the way through. Enjoy!

    Dinner

    I served the chicken with roasted broccoli and brown rice last night. Fabulous dinner. The chicken had strong flavors of both lemon and garlic. Mmm!

    I ate dinner pretty early in the evening, so I ended up getting hungry right before bed and snacked on some peanuts.

    Marinating is such a great way to add flavor to chicken. I just have to remember to do that ahead of time.

    This is fantastic! I need more quick & tasty chicken recipes for when school resumes in a couple weeks.

    I like to dip chicken in buttermilk and then roll in a mixture of parmesan, italian seasoning, and chopped pecans. It’s fantastic.

    I’ve recently started marinating chicken and it makes all the difference. From homemade marinades to some delicious store-bought versions, it’s a great way to spice up plain ol’ chicken.

    Does the acid from the lemon “cook” the chicken if it marinates over night? That recipe does sound delicious. We love doing roasted chicken quarters with fall veggies:

    Dinner on this side of the screen was also super easy AND delicious! Chicken breast seasoned with salt and pepper, butterflied and filled with a mixture of goat cheese and a hot pepper raspberry chipotle sauce. Mmm mm.

    Chicken Marbella is an amazing thing to make for when company comes over. It’s so yummy, and most people have NEVER tried/heard of it!

    Ooh! I might just have to try that this week. Sounds delish. Also, sounds like an easy way to marinate chicken in an assortment of toppings.

    I made these chicken roll ups back in college from a WW Take Out Cookbook, and they would’ve been better had I gotten the chicken cutlets hammered out a lot flatter, but they were still tasty. Chicken, a strong italian cheese of choice (I think provolone?) and pancetta. Soooo yummy!

    Looks yum! My favorite chicken recipe I used to make: throw some chicken breast into the crockpot, pour in a can of rinsed black beans, and jar of salsa. Let it simmer all day and serve over brown rice. Delish every time!

    Thanks for sharing the recipe. Since my Crohn’s flare and trying to eat differently, I’m sort of at a loss for making meals. I’m not much of a cook to start with, and all the healthy things I used to make (example, black bean burritos) have to be replaced with lower fiber, lower fat options. It’s my turn to cook soon and this may just end up on the plate! If I try it, I’ll post back to let you know how it turns out. Thanks again. :) – M
