• Baked Lemon-Garlic Chicken (& fitmixer Holiday Promotions)

    December 18, 2012

Last night’s dinner was de-lic-ious! And it was SO easy to make! Ok, well, everything you see on CNC is easy to make, but this recipe was especially easy. And delicious! Did I say that already? Ok, you really should just make it!  😉

    • 3 chicken breasts (~1.5 lbs)
    • 1 tbsp minced garlic
    • 1 tsp garlic powder
    • 1/4 cup lemon juice
    • 2 tbsp olive oil
    • 1/4 tsp salt
    • 1/4 tsp pepper
    • 2 tbsp minced cilantro

Combine all ingredients in a large Tupperware container or plastic bag and mix/shake to coat chicken.

    Allow to marinate 3-4 hours.

Bake on 375 degrees F for approximately 30 minutes or until chicken is cooked all the way through. Enjoy!

I served the chicken with roasted broccoli and brown rice last night. Fabulous dinner. The chicken had strong flavors of both lemon and garlic. Mmm!

I ate dinner pretty early in the evening, so I ended up getting hungry right before bed and snacked on some peanuts.

fitmixer’s 6 Days of Christmas Sale

Lots of awesome fitmixer sales happening right now!

Each of these promotions will be held for one day only. To get the sale codes, just “like” the fitmixer Facebook page and then click on the app titled “6 Days of Christmas.” Personally, I think the deals on December 20, December 21, and December 22 are especially awesome (BOGO, free shipping, and $25 off Boot Camp registration). For the deal on December 22nd ($25 off fitmixer Boot Camp registration), please let me know if you end up signing up. I’m thinking about doing the Boot Camp myself, so if enough CNC readers register, I’m going to plan something fun with fitmixer to keep us motivated!

    Question of the Day

What’s your favorite chicken recipe? Please feel free to share links!

P.S. I recently read about a neat organization called Medals4Mettle that distributes earned marathon, half marathon, and triathlon medals to people fighting debilitating illnesses. What a great idea, right? Now I’m seriously thinking about donating a bunch of my race medals.

My kind of meal- I love simple, quick chicken recipes like this!

    Tina December 18, 2012 at 8:05 am

    Me too! 🙂

    Erica December 18, 2012 at 8:14 am

Just bookmarked this recipe!! Sounds totally delicious. I’m always looking for new chicken recipes

Michelle @ Eat Move Balance December 18, 2012 at 8:24 am

Marinating is such a great way to add flavor to chicken. I just have to remember to do that ahead of time.

Here’s one of my favorite chicken recipes (besides the easy way out–throw it in a slow cooker with some broth–can’t mess that up!): http://eatmovebalance.com/italian-stuffed-chicken-breasts/

Ali @ Peaches and Football December 18, 2012 at 8:31 am

This is fantastic! I need more quick & tasty chicken recipes for when school resumes in a couple weeks.

I like to dip chicken in buttermilk and then roll in a mixture of parmesan, italian seasoning, and chopped pecans. It’s fantastic.

    eliz@ourcrazysweetlife December 18, 2012 at 8:44 am

I’ve recently started marinating chicken and it makes all the difference. From homemade marinades to some delicious store-bought versions, it’s a great way to spice up plain ol’ chicken.

    Sara @ fitcupcaker December 18, 2012 at 8:48 am

I don’t know if I have a favorite! I make a healthy chicken Parmesan, and I made soup last night with shredded chicken. Pretty tasty!

Ashley @ Coffee Cake and Cardio December 18, 2012 at 8:48 am

My most recent favorite was southwestern baked chicken breast. http://www.coffeecakeandcardio.com/2012/12/14/weight-watchers-weigh-in-week-8/

    Katie @ Peace Love & Oats December 18, 2012 at 8:49 am

My mom uses lemon pepper when she marinades chicken and I absolutely love it!

Kristen @ Change of Pace December 18, 2012 at 8:52 am

Does the acid from the lemon “cook” the chicken if it marinates over night? That recipe does sound delicious. We love doing roasted chicken quarters with fall veggies:

It’s a one pan meal and is perfect for the cold weather!

    Tina December 18, 2012 at 8:56 am

Oh! Good call. Maybe I shouldn’t suggest having it marinate overnight.

mary @ minutes per mile December 18, 2012 at 9:00 am

stir-fry. so easy, so versatile, so delicious!

    Kelly December 18, 2012 at 9:04 am

Last night I made the Lemon Artichoke chicken from Practical Paleo…it was soooo good! Definitely a repeat 🙂

    Tina December 18, 2012 at 9:18 am

I need to make that! It looks so good!

Katie @ Talk Less, Say More December 18, 2012 at 9:10 am

Dinner on this side of the screen was also super easy AND delicious! Chicken breast seasoned with salt and pepper, butterflied and filled with a mixture of goat cheese and a hot pepper raspberry chipotle sauce. Mmm mm.

Chicken Marbella is an amazing thing to make for when company comes over. It’s so yummy, and most people have NEVER tried/heard of it!

    Tina December 18, 2012 at 10:07 am

Oh my gosh, I LOVE Chicken Marbella! I’m adding this to my menu for next week. Thanks for the link! 🙂

    Beks December 18, 2012 at 10:27 am

Ooh! I might just have to try that this week. Sounds delish. Also, sounds like an easy way to marinate chicken in an assortment of toppings.

I made these chicken roll ups back in college from a WW Take Out Cookbook, and they would’ve been better had I gotten the chicken cutlets hammered out a lot flatter, but they were still tasty. Chicken, a strong italian cheese of choice (I think provolone?) and pancetta. Soooo yummy!

    Becky @ Olives n Wine December 18, 2012 at 10:35 am

Metals4Mettle sounds like an awesome organization! I have a few medals sitting in drawers that I definitely don’t need. What an awesome idea!

    Ed December 18, 2012 at 10:41 am

Looks tasty…my favorite chicken recipe is the full bird made by grandma…:P

    Taylor @ LiftingRevolution December 18, 2012 at 10:44 am

Looks yum! My favorite chicken recipe I used to make: throw some chicken breast into the crockpot, pour in a can of rinsed black beans, and jar of salsa. Let it simmer all day and serve over brown rice. Delish every time!

    Jolynn December 18, 2012 at 10:50 am

Yum! I think I’ll try that tonight!

This is a super easy way I cook all my chicken and then you can season it with whatever you want. http://www.jolynntoma.com/blog/2012/01/27/crockpot-shredded-chicken/

    Annette@FitnessPerks December 18, 2012 at 10:52 am

I love cilantro with chicken. YUMM!

Stellina @ My Yogurt Addiction December 18, 2012 at 10:57 am

Love easy meals!! My favorite way to have chicken is marinated with lemon and peper and grilled to perfection!

Kerry @ Totes My Oats December 18, 2012 at 11:03 am

I love marinades with lemon! It makes the chicken so tender.

Molly @ Just Your Average Athlete December 18, 2012 at 11:32 am

I made this Garlic Brown Sugar Chicken that is delicious! Sounds strange, but the tastes compliment each other so well – http://recipes.sparkpeople.com/recipe-detail.asp?recipe=376900

    Hannah @ CleanEatingVeggieGirl December 18, 2012 at 11:42 am

Peanuts are the BEST! But way, way too addicting! 😉

    Melissa December 18, 2012 at 11:46 am

Thanks for sharing the recipe. Since my Crohn’s flare and trying to eat differently, I’m sort of at a loss for making meals. I’m not much of a cook to start with, and all the healthy things I used to make (example, black bean burritos) have to be replaced with lower fiber, lower fat options. It’s my turn to cook soon and this may just end up on the plate! If I try it, I’ll post back to let you know how it turns out. Thanks again. 🙂 – M

    Amanda A December 18, 2012 at 11:47 am

Great chicken recipe! I love how easy it is….those are the best kind.

    Candice@allthingsyogi.com December 18, 2012 at 12:07 pm

I love lemon seasoning and rosemary on chicken…I dont have a recipe that stands out, but any chicken cooked with lots of flavor is a win!

Love a good chicken baked with lemon, sounds delish! One of my favs is “The Easiest Crockpot Chicken You’ll Ever Make” (http://tinyurl.com/cjmn6yg) Awesome for any Mexican themed meal. I always make a ton & eat leftovers!

I’m registered for bootcamp! Getting nervous/excited to start since I found out that I’ll be travelling internationally right when it starts – it will be a good change to my typical run/yoga/weights routine though.

That recipe looks amazing! I think I’ll add it to the dinner menu next week.

I’m doing the fitmixer bootcamp too and it would be a lot of fun if you did something here too to help with motivation and encouragement. You can never have too much support!

    Sarah December 20, 2012 at 12:11 am

I’m all signed up for the bootcamp. I did the last one too, LOVE IT!!!
