• My Go-To Breakfasts & a Double Under PR

    Maybe I’m boring, but I tend to eat the same few breakfasts over and over again. I like to try new things, but breakfast is one of those meals that I don’t like to mess with too much because a good breakfast sets the tone for my day. I want my breakfast to fill me up and satisfy me, so I can get on with the rest of my day. I hate it when I eat breakfast and just a couple of hours later, I’m hungry again. With that said, here are my go-to, delicious, satisfying, hold-me-over-for-hours breakfasts:

    What’s your favorite go-to, delicious, satisfying, hold-you-over-for-hours breakfast?


    Not surprisingly, I started my morning with a French Toast Breakfast Scramble in a jar (FTBSIAJ) with an extra scoop of Teddie in the mix.


    I also drank a glass of iced Dandy Blend with almond milk and a splash of sugar cookie coffee creamer. ‘Tis the season!




    After breakfast, I headed to CrossFit. Today’s workout was all about Double Unders.

    After warming up, we spent about 15 minutes practicing them, and I managed to beat my previous Double Under PR with 37 unbroken! Woohoo! I’ve been stuck at 24 for awhile now, so it was nice to finally beat it!

    The WOD as prescribed was 7 rounds for time of a 10 calorie row, 20 Hollow Rocks, and 30 Double Unders unbroken.


    I’m getting better at Double Unders, but there was no way I could do 30 unbroken 7 different times. Well, maybe I could, but it would take me forever, so I did the Level 2 option, which was 20 Double Unders (not unbroken).


    I did a couple of rounds of 20 Double Unders unbroken (I always feel so cool when I don’t mess up and can just throw down my rope) and finished the WOD in 11:33.

    Our class was a bunch of WOD ninjas and finished the workout much faster than expected, so we ran one mile outside as a finisher.


    After CrossFit, I drove to Michaels for some arts and crafts fun. (I’m so not crafty, but I try!)


    Hooray for “jingle deals!”


    I’ve been kind of obsessed with having a nice, decked-out mantel over our fireplace this year, so I bought all sorts of goodies at Michaels. I had a tough time envisioning what it would look like, but, hopefully, it comes together. I’ll snap some pics once I getting it looking pretty!



    After I got home from Michaels, I reheated some leftover Gingery Beef and Broccoli for lunch.


    What a lovely piece of broccoli! Drop Dead Fred anyone?


    Once I finished eating, I poured myself a glass of iced Dandy Blend and added some Rice Nog to it. It was on sale at the grocery store and I had a coupon for it, so I bought a carton to try. My review: It’s not good. It’s super watery and doesn’t really taste like eggnog. Don’t waste your money.



    A little while later, I started to get hungry again, and I knew there was no way I could make it until dinner, so I sliced up a banana and added some sunflower butter and shredded coconut as a snack.

    I agree with you on the breakfast thing! I usually rotate my breakfasts between some sort of oatmeal combo with an egg whisked in and topped with nut butter, an egg and cheese sandwich, or protein pancakes topped with nut butter. Every once in awhile I’ll do something “special” on the weekends, but it still needs to have a substantial amount of healthy fats and protein to hold me over for awhile!

    I am really repetitive with my breakfasts to. I usually have a banana with nut butter. Sometimes eggs or two ingredient pancakes if I have time.

    Totally with you on the breakfast thing! But I like to add seasonal flavors to my basic favorites – i.e. adding pumpkin to my pancakes, gingerbread to my oatmeal, etc .
    By the way on the eggnog thing – I just recently discovered Bolthouse Farms Eggnog which is Low Fat and a reasonably healthy alternative and it tastes GREAT. Definitely a new favorite for the holiday season

    Have you ever tried making mini eqq quiches or frittatas? I find that most of the recipes are gross…maybe because I can handle re-heated eggs?

    Every time I see PR on here I think it’s Public Relations, lol. Guess it’s the Ad/PR major in me.

    I absolutely love egg-jam-cheese sandwiches in the morning. They’re my go-to when I don’t feel like oatmeal but still want something filling.

    Have you tried the Silk Holiday Nog(Soy)? I think it’s pretty good and not too bad for you compared to regular eggnog. I look forward to it every year so that I can get my nog fix.

    I’m so boring and have oatmeal every single day. I mix up the toppings but I find that it’s the only breakfast that will fill me up until lunch. Oh heck, why am I looking for excuses? I LOVE oatmeal lol!!!

    I am the queen of consistant breakfasts! on the week days I usually have my usual plan Chobani 0% yogurt with Flax and almonds mixed in. On the weekends I have more time, so I usually make some oatmeal with banana’s and peanut butter! Bfast might be my favorite meal of the day!

    Hi Tina I was looking for one of your posts about how you started doing something different or taking something new that helped your face clear up?? I can’t find it and I was wondering what you do to keep your skin clear….I have never had a problem until the last couple months and all my go-to face stuff isnt helping either…very frustrated lol.     So delicious brand makes a great coconut milk egg nog! I became obsessed with it last winter and just stocked up yesterday for this season. You should def give it a try – even my non-coconut loving family enjoyed it!

    My favorite breakfasts lately have been a piece of sprouted grain toast spread with 1/2 avocado, mashed and seasoned with salt, pepper, chili flake, and a lime/lemon juice and topped with an over easy egg. Or I’ll do a couple of over easy eggs with black beans, spicy green salsa, and a dollop of plain greek yogurt.

    Your lunch looks pretty small. Aren’t you hungry after crossfit? That cup of beef and veggies doesnt look like it would fill me up at all.

    I tried your microwave english muffin! Mine looked different but it was so good! I think it’s because I used Bob Red Mill almond flour, but who cares, it was still great!     If you think you’re boring with your breakfast rotation, then I must be super ridiculously boring, because I pretty much have the same thing almost every day. An egg and cheese sandwich on GF bread. It’s just so easy, filling, and when I’m half asleep in the morning I don’t want to bother with much else!

    Urgh, rice milk is just not nice. I tried it a few years back and couldn’t get on with it. It’s always worth trying these things, though. At least we know now!

    My go to breakfast right now is a hot smoothie. Pumpkin, almond milk, and a tbsp of oats, splash of stevia and tons of pumpkin spice blended and heated up. Add a dollop of sunflower butter to the top and it rocks. I eat it with a spoon, if i drank it I would be hungry 5 minutes later.
    Can’t wait to see the mantel!

    Breakfast is my favourite meal of the day and your so right, having a good one really sets the tone! It’s got to have a nut or seed butter, fruit, and a base of either pancakes, french toast, baked or whipped oats with protein powder in the mix! 🙂 All vegan, all super filling and all tide me over until lunch! I make instant protein bakes all the time now which is a super filler if I’m having a particularly famished day – fruit, chia seeds, protein powder, coconut flour and almond meal, topped with nut/seed butter…heaven! 🙂

    I’m probably the most boring breakfast eater ever. I eat oatmeal with peanut butter, cinnamon, and bananas every morning. I’ve basically eaten it everyday since I discovered the mixture, which was about a year ago. I’m obsessed with cereal and want 50 bowls when I do eat it, so I try not to eat it too often.

    I’m the same way about breakfast – I eat different lunches/dinners almost every day, but for breakfast I tend to stick to my tried and true oatmeal. With egg whites, soy milk, chia seeds, a banana, granola and soy nut butter it keeps me full for hours!

    I SO want one of my girlfriends to host a Christmas crafts party rather than the usual cookie swaps. Don’t get me wrong, I LOVE any excuse to bake cookies, but I’m a total wannabe crafty person trapped in the body of a not-so-crafty person.     Congrats on the double unders! When I started crossfit a month or so ago, I realized that I hadn’t jumped rope in about 20 years (yikes), so it has been a re-learning process for me. I’m hoping to get to one double under soon :)!

    I totally get eating the same breakfast every day. I tend to go in cycles. For a while I ate refrigerator oats every. single. day. Only changed up the fruit I added to it. Now I eat a bagel with cashew butter. That stuff is the BOMB! Haven’t tried crossfit, but am definitely curious now!

    I am the exact same way with breakfast! I often see tasty-sounding ideas on other blogs, but often don’t try them because I don’t know for sure how well they’ll hold me over…and being hungry 1 hour after breakfast is definitely not the way to start my day on the right foot! I usually stick with either oatmeal, overnight oats, or a bowl of cereal w/ sliced banana.

    Hmm..quick question for you: I’m allergic to eggs and haven’t ever had real eggnog. I know you said the “rice nog” wasn’t good, but do you think it would be worth a try for a person who doesn’t know what real eggnog taste like? Or should I just skip it? 🙂

    It’s ok, but not nearly as rich and creamy as the real stuff. The soy and coconut varieties are really tasty. Maybe try one of those instead? Rice nog wouldn’t be my first pick!

    I’m super boring! I “eat” a giant smoothie for breakfast everyday. The thicker the better! It’s like ice cream for breakfast. Only with tons of healthy stuff in it.

    Have you tried the Soy Nog? My dad bought one that actually tastes pretty good. I generally like a splash of eggnog in my coffee, which hasn’t been working for me this year so far, but I have enjoyed a few sips of the soy eggnog.

    I can’t cook at all (l’m a pro at microwaving though!) so I’m suuuper boring with my food choices. Very repetitive! all you cookers/bakers out there are so impressive to me!

    I LOVE the Rice Nog. As a matter of fact, I made oatmeal minus the oats this AM and used 1/2 almond milk and 1/2 rice nog. You should try it!

    I usually have either an egg “sandwich” or oatmeal BUT today I tried your 2 ingredient pancake (i added some oat bran) and I was surprised that I liked it so much..it was a tad eggy but I really liked it and will have it weekly now! I just put some prepared PB2 on it..Yummy!
