I can’t believe Halloween is tomorrow. I hope we’re ready for the trick-or-treaters in our neighborhood. Last year, they wiped us clean in just a couple of hours, so Mal and I are ready with tons of candy this year. And I bought all our favorites just in case we have leftovers!
Lunch
Yesterday’s lunch was a bunch of leftovers from the previous night’s dinner: coconut-almond flour-crusted cod with roasted asparagus and steamed spinach. I chopped up the asparagus and mixed it all together this time. Quick, delicious, satisfying.
Snack
A little while later, I whipped up a thick, creamy, sweet, and satisfying Pumpkin Pie Protein Smoothie. It totally hit the spot. In the mix:
- 1/2 cup canned pumpkin
- 1 frozen banana
- 1 tbsp pumpkin pie spice
- 1 tsp honey
- 1 cup almond milk
- 1 scoop vanilla protein powder
Workout
After drinking my smoothie, I did my Monday time trial for the Plank Challenge. I’ve been using the stopwatch on my iPhone to time myself, so I’ll distract myself by playing with Twitter and Instagram while I am planking. It definitely helps make the time go by faster. I managed 3:33 yesterday, which is a whole minute increase from last week! Woohoo! How’s the Plank Challenge going for you?
Hurricane Sandy never got too bad where we live, so Mal and I decided to go to CrossFit yesterday afternoon.
I thought only crazy people like Mal and me would venture out during a hurricane to do CrossFit, but there was a FULL class last night. I can’t believe so many people showed up!
Last night’s WOD was a special birthday workout for one of our members.
For this workout, you started with 2 Hang Power Cleans and then 2 Burpees onto a 45-pound plate (we just jumped on it). Then, you did 4 reps of each exercise and then 6 reps and so on for 12 minutes. I used 75 pounds for the Hang Power Cleans and started out pretty strong with unbroken reps until I hit 12 reps, which I broke into two sets of 6. At 14 reps, I broke the Hang Power Cleans into two sets of 5 and one set of 4. (The Burpees were no problem. I did them all unbroken.) When I got to the 16 Hang Power Cleans, I basically died and put the bar down a bunch of times and only did sets of 2-3 reps. My forearms were on fire! I just couldn’t hold the bar anymore. I finished with a score of 14 + 12.
Dinner
When we got home from CrossFit, I threw dinner in the oven, which was Engagement Chicken. I prepped everything ahead of time, so all I had to do was put the bird in the oven when I got home.
Since I was turning on the oven to cook a chicken, I also roasted a spaghetti squash and butternut squash for meals later this week. Two birds, one sword stone.

The Engagement Chicken turned out great (I swear, it’s the easiest, most delicious roast chicken recipe out there), and I made Mustardy Swiss Chard and Butternut Squash to go with it. Mmm”¦ delicious dinner!
For dessert, I baked some “Halloween Treats” sugar cookies. I don’t know how these ended up in our refrigerator, but they did.
They were really weird-looking, but, oh, so delicious!
Mal and I each ate 3 of them.
