Greetings from the Seattle airport!
Mal and I are taking a red-eye home from Boston and we have some time to kill before our flight, so I decided to put together our meal plan for the week. We had quite a jam-packed/awesome weekend, which means I’m a tad exhausted and my brain really isn’t in the mood to think too hard. I didn’t look for new recipes to try this week and you’ve probably seen these meals on CNC in the past, but they’re some of my very favorites and definitely ones to try!
Here’s this week’s dinner plan:
- Sunday: Wedding buffet
- Monday: Out to dinner
- Tuesday: Paleo Pad Thai
- Wednesday: Skillet Sweet Potato, Sausage, and Spinach Hash
- Thursday: Out to dinner
- Friday:Meat Lover’s Pizza
- Saturday: Wing it/leftovers
Shopping list:
- Bananas
- Red onion
- Mushrooms
- Almond milk
- Cucumber
- Ground turkey
- Onion
- Berries
- Avocado
- Acorn squash
- Snap peas
- Sausage
- Spinach
- Chicken
- Green bell pepper
- Scallions
- Spaghetti squash
- Sweet potatoes

*My shopping list doesn’t include all of the ingredients necessary to make the above meals. For a complete list, please see the individual recipes linked above.
P.S. There’s still time to enter the Moving Comfort Urban Gym Capri giveaway and Practical Paleo giveaway! I’ll pick a winner for each Tuesday afternoon!

Yum, sweet potato and sausage!
I made the Paleo Pad Thai for the first time last night and LOVED it! The sunshine sauce is addictive! I’ll have to try your sweet potato hash as well.
Nice!!!! I love that stuff too!
OO crazy, I did too!! Just last night! It was delicious, except I used tofu instead of chicken so it wasn’t quite paleo.
Have a safe and uneventful flight. I need to break out the sweet potatoes – I think I love them even more than pumpkin!
When you’re feeling adventurous, swap kale for the spinach in the hash–delish! I have some variety of that for breakfast a lot.
Love seeing your grocery list

If you have leftover spaghetti squash, here is another delicious recipe:

The Paleo Pad Thai sounds like a great idea!
I really need to start meal planning. I am not good at it and usually end up spending much more money than needed.
I have kind of dabbed into Paleo lately and I am enjoying it. I am still not fully committed
Love me some sweet potatoes!
Looks like a good meal plan to me!
sometimes the best weeks are the ones with just easy favorites! Makes the cooking go by faster when you can just do it without looking at a recipe. This week is “boring” but yummy week for us too.
I really need to make that sunshine sauce! Sounds to good to be true;)
Safe travels! That hash sounds so simple and delicious… I need to try that. Awesome flavor combo I bet!
I have been salmon-ing for breakfast and it is the perfect food to get the day going.
Have you ever started your day with fish? thoughts?
Ohh I’m putting that Sweet Potato Hash recipe on my need-to-make list! I don’t follow Paleo, but I can adjust it if need be.
Hi Tina,
I work with the Cheerios FB page and we came across this blog post and think it would be great to share with our community. Would you be ok with us linking to this?
Thanks!
I would love the urban gym skirt. I think it would be fun and flirty.
I looove sweet potato skillets!! I’ve only made them with onions and eggs though, need to try this one!!!
Slightly off-topic of meal plans, but I saw this picture and just about died. You may have already seen it, but just in case, I have to share it!
