CNC Meal Plan: Week of October 7

Greetings from the Seattle airport!

Mal and I are taking a red-eye home from Boston and we have some time to kill before our flight, so I decided to put together our meal plan for the week. We had quite a jam-packed/awesome weekend, which means I’m a tad exhausted and my brain really isn’t in the mood to think too hard. I didn’t look for new recipes to try this week and you’ve probably seen these meals on CNC in the past, but they’re some of my very favorites and definitely ones to try!

I made the Paleo Pad Thai for the first time last night and LOVED it! The sunshine sauce is addictive! I’ll have to try your sweet potato hash as well.

OO crazy, I did too!! Just last night! It was delicious, except I used tofu instead of chicken so it wasn’t quite paleo.

When you’re feeling adventurous, swap kale for the spinach in the hash–delish! I have some variety of that for breakfast a lot.

I really need to start meal planning. I am not good at it and usually end up spending much more money than needed.

I have kind of dabbed into Paleo lately and I am enjoying it. I am still not fully committed :-)

sometimes the best weeks are the ones with just easy favorites! Makes the cooking go by faster when you can just do it without looking at a recipe. This week is “boring” but yummy week for us too.

Ohh I’m putting that Sweet Potato Hash recipe on my need-to-make list! I don’t follow Paleo, but I can adjust it if need be.
