• Vanilla Cake Batter Coconut Butter

    September 5, 2012

Did those 5 words in my post title catch your attention? Oooh, I bet they did! I’ll explain in a minute! Food first!

Today’s lunch was a mix of a bunch of delicious and nutritious goodies. On my plate: leftover Paleo Pad Thai.

    IMG_1278 (750x563)

And a spaghetti squash-egg-coconut flour pancake with avocado on top. The pancake kind of bombed—I cooked it too fast and it stuck to the pan—so I’m going to give it a whirl again later this week. I have lots of spaghetti squash to use up!

Ok, are you ready to hear about this vanilla cake batter coconut butter? Oh my goodness, it’s heavenly! Life-changing even! Winking smile

Nikki from Nikki’s Coconut Butter recently contacted me to see if I wanted to try her flavored coconut butters. I love all things coconut, so, of course, I was game. She sent me two jars: vanilla cake batter and honey pecan pie. I bet you can guess which one I tried first!

Both flavors are OMG, AMAZING. The vanilla cake batter flavor reminds me of really thick, grainy vanilla frosting and the honey pecan pie flavor reminds me of the apple-cinnamon gooeyness in warm apple crisp. Holy yum indeed!

I’m planning to host a giveaway to win a couple of jars of Nikki’s Coconut Butter next week, but if you want to buy some now, use coupon code “COCO10” to get 10% off of your first order.

Wowsers! I love Artisana Coconut Butter but that sounds incredible!!! Wonder will or do iHerb stock it?!

Chelsie @ Balance, Not Scale September 5, 2012 at 5:04 pm

You’re right, my mouth literally started to water when I read the title. And after reading your description … might just have a small (ie. GIANT but I’m trying to act cool and aloof) celebrity crush on this coconut butter!!

Brie @ Impatient Baker September 5, 2012 at 5:10 pm

I always hesitate buying coconut butter because I know I’ll eat at least 1/4 of the jar in one sitting :O

    Nataliya @irunforicecream September 5, 2012 at 5:21 pm

Yum! Coconut butter sounds amazing! Are there any added sugars in it? What’s the sweetener?

    Tina September 5, 2012 at 6:28 pm

The website lists all of the ingredients for each one, but most are sweetened with honey.

    Hayley September 5, 2012 at 5:24 pm

Hi Tina, what do you eat with/how do you use the vanilla cake batter coconut butter. Those are my FAVE flavors!!

    Tina September 5, 2012 at 6:27 pm

I just got them today, so straight from the jar! 🙂 I’ll probably eat them like nut butter though– with sliced banana, on pancakes, etc.

Katie @ Peace Love and Oats September 5, 2012 at 5:26 pm

Oh my goodness gracious that sounds soooo good!!! Anything flavored “vanilla cake batter” is a winner in my book!

    Ed September 5, 2012 at 5:32 pm

That looks really tasty! Now if only I would arrive at home after work with it ready for me 🙂

    Danielle@cleanfoodcreativefitness September 5, 2012 at 5:42 pm

OMG that just sounds amazing!!!! I am in love with coconut butter just plain I can only imagine how good cake batter flavor is!

    Annette@FitnessPerks September 5, 2012 at 5:46 pm

Holy crap! That stuff does sound good–especially the honey pecan pie. Mmmmmm!

    Angela@The Chicken Scoop September 5, 2012 at 5:49 pm

Those coconut butters sound amazing! I just ran out of Justin’s Chocolate Hazelnut butter and need something new for my nut-butter cravings!

Michelle @ Eat Move Balance September 5, 2012 at 5:54 pm

    Hi Tina,
You’ve been talking a lot about the Paleo diet lately, so I thought I’d let you know about the post I wrote on my blog today. One of my dear friends published a paleo cookbook (for football season!), that was released today. There are some great recipes in it! http://eatmovebalance.com/cookbook-release-pigskin-paleo/

Cait @ Beyond Bananas September 5, 2012 at 6:27 pm

I think that coconut butter sounds delicious.. considering I eat cake batter by the tablespoon full whenever I make cake!

    Kristine September 5, 2012 at 6:57 pm

Yum, anything with “cake batter” in the title makes me want to try it! Surprisingly enough I’ve never used coconut butter (although it seems to be popular in the vegan community)… this may be my reason to give it a try!

Stellina @ My Yogurt Addiction September 5, 2012 at 7:15 pm

Thats sounds decadent!!!! I am with you on the diet change for the better. I have recently had to cut back on the amount of dairy I eat (horrible I know!) due to some digestion issues I still haven’t quite pinpointed. I keep telling myself it’s for my health, and that usually makes me feel a little better!

    Allie September 5, 2012 at 7:46 pm

Holy YUM that stir fry looks great! I’ve started swapping spaghetti squash for pasta in most my recipes (I’m a celiac) and I never thought to try it in stir fry – DUH! I’ve been using quinoa, which is great, but I’m really trying to limit my dependence on grains with meals, so this is fantastic. Thanks for the great idea! I’m a long time reader and rarely comment, but your pancake recipe has also been a lifesaver!

    Matt @ The Athlete's Plate September 5, 2012 at 8:11 pm

    Ordering some right now 🙂

    Tina September 5, 2012 at 8:23 pm

    Great decision! It’s amazing!

Kristen Exline September 5, 2012 at 8:42 pm

Ok, I just bought the Vanilla Cake Batter flavor…. Super pumped to get it 🙂

Jennifer @ Peanut Butter and Peppers September 5, 2012 at 8:52 pm

The coconut butter sounds amazing! I am on such a coconut kick! I’m making everything with it. Now tell me, what do you use coconut butter for?

    Wifey September 5, 2012 at 9:05 pm

Yeah, you win for the post title. Tee hee hee.

Good luck with changing your diet. I hope it works and helps with your health issues.

    Winks & Smiles,

Natalie @ will jog for food September 5, 2012 at 9:06 pm

I NEED some of that coconut butter 🙂

    Aurielle @ Will2Wellness September 5, 2012 at 9:09 pm

    Hey Tina!
The coconut butters sound amazing. I love anything that tastes like cake batter!
Great tips on how to make starting a diet easier. I definitely plan on using them on my own journey to get healthier! The one that really resonated with me was: Make Healthy Foods Visible. If I keep fresh fruit on my kitchen counter where I can see it, I’m more likely to reach for it, rather than junk food.

    Stephanie September 5, 2012 at 9:20 pm

Those coconut butters look delish! I have no idea what I would eat them with though…. Did you just put them on some sort of fruit, or maybe on top of some paleo pancakes??

    Farah September 5, 2012 at 9:55 pm

    Hi Tina,

I know that in earlier posts you’ve said that you’re not following a Paleo diet, but following an SCD diet. However, I notice that you’ve made many Paleo recipes recently and are also giving away a Paleo cookbook. What is the difference between the Paleo and SCD diet? Are they mostly similar? Just curious – that’s all 🙂

    Tina September 5, 2012 at 10:02 pm
    Farah September 5, 2012 at 10:12 pm

Thanks! I’ll definitely check this out. It’ll be an interesting topic of discussion in my Human Nutrition & Advanced Metabolism class in grad school too 🙂

    dawn September 5, 2012 at 10:00 pm

    sending love

Katie @ Talk Less, Say More September 5, 2012 at 10:27 pm

Dang that coconut butter sounds AMAZING!!!

michelle kim September 5, 2012 at 11:09 pm

Ooh, your spaghetti squash pancake sounds delicious! I really enjoyed your 2-ingredient pancake!

    Jamie@everydaydolce.com September 5, 2012 at 11:41 pm

Holy smokes! Coconut butter! That looks so delicious 🙂 Glad you are able to get back into your Crossfit “groove” despite the health issues. I’m cheering for ya!

Khushboo Thadani September 6, 2012 at 2:14 am

Oh boy, that coconut butter really does sound fantastic…but so does anything cake batter, right ;)! I think that might be the ultimate pancake topper!!

Dee @ Eating France September 6, 2012 at 2:57 am

I just tried ordering 2 tubs of the coconut butter (vanilla cake and chocolate hazelnut brownie) but they don’t deliver to France 🙁 I could almost taste it on my tongue! I even struggle to get nice peanut butter here, there is no justice in this world!

Chelsea @ One Healthy Munchkin September 6, 2012 at 7:11 am

Mmm that cake batter coconut butter sounds amazing!

    Jeni September 6, 2012 at 7:35 am

Holy god, I need that in my life immediately.

    Tina September 6, 2012 at 7:47 am

    Haha! It’s no joke!

Meghan @ After the Ivy League September 6, 2012 at 8:10 am

Vanilla cake batter coconut butter. It’s 8am and I can’t think of anything else I’d rather eat than cake batter! Thanks for the coupon code, I’m trying it! 🙂

    Molly September 6, 2012 at 8:25 am

omg i really want to try that coconut butter!! sounds so good!

Brooke @ Pretty In Protein September 6, 2012 at 9:40 am

I think Im going to have to order some of that. Yes, I have to. Yum!

    Pauline September 6, 2012 at 10:48 am

Just ordered some! I cannot wait to try it! Thanks for sharing.

    Alisa September 6, 2012 at 12:18 pm

I just ordered the macadamia nut one and am so stoked! I’m a coconut butter addict and love mac nuts, so this could be dangerous. I really want to try the pecan one too, but maybe the next time around. Thanks for sharing the discount code. I’ll be sure to enter your giveaway too 🙂

    Katie September 6, 2012 at 12:46 pm

Is the consistancy the same as peanut or almond butter?

    Tina September 6, 2012 at 12:46 pm

It’s not as thick and more grainy.

Sam @ Better With Sprinkles September 6, 2012 at 2:19 pm

Coconut butter is on the list of things I really want to try but haven’t picked up yet! This variety looks insane in the best way possible. 🙂

    Debbie September 6, 2012 at 10:16 pm

I tried looking for a recipe for the spaghetti squash pancake and wanted to know if you could tell me what you put in it? Approximate amounts work, I’m a wing it type of cook 😉

Christina @ The Beautiful Balance September 7, 2012 at 1:30 am

It is disgusting how much I love coconut ANYTHING. My shampoo and conditioner is even coconut (Desert Essence) and I have coconut candles everywhere. If you have the opportunity, pick up Trader Joe’s brand new “Canned Coconut Cream.” Ridiculous.

I still have yet to figure out coconut flour and I like to think of myself as a pretty skilled chef. It soaks up SO much moisture which completely changes the texture, taste, appearance, everything.

    Tina September 7, 2012 at 1:33 am

    Thanks for the TJs rec!!

    Kelly@BalancedDaily September 7, 2012 at 9:19 am

That. stuff. looks. amazing. YUM! I love cake batter flavored anything, like you do. Ice cream (of course) is the best, but this coconut butter looks unreal and I might need to use that promo code to buy a couple of jars. Did you like the honey pecan pie one? I’m going to look now to see what other kinds of unique flavors Nikki has. P.s. Whenever you put up pictures of avocado it makes me crave them. Definitely going to include some in my dinner tonight.

    Kelly September 11, 2012 at 8:26 pm

The Vanilla Cake Batter and Honey Pecan Pie flavors sound nothing short of amazing! 🙂

Nicole Cobe September 12, 2012 at 6:22 am

I have always used Artisana Coconut Butter — and I am currently out. These flavors look amazing!
