Lunch
Today’s lunch was a mix of a bunch of delicious and nutritious goodies. On my plate: leftover Paleo Pad Thai.
And a spaghetti squash-egg-coconut flour pancake with avocado on top. The pancake kind of bombed—I cooked it too fast and it stuck to the pan—so I’m going to give it a whirl again later this week. I have lots of spaghetti squash to use up!

Both flavors are OMG, AMAZING. The vanilla cake batter flavor reminds me of really thick, grainy vanilla frosting and the honey pecan pie flavor reminds me of the apple-cinnamon gooeyness in warm apple crisp. Holy yum indeed!

I’ve recently made changes to my diet due to some health issues, but it hasn’t been easy to give up my favorite foods and drinks, specifically iced coffee and beer. Yet, I know it’s for the best, especially if these adjustments might improve my health.

Yum! Coconut butter sounds amazing! Are there any added sugars in it? What’s the sweetener?
The website lists all of the ingredients for each one, but most are sweetened with honey.

Yum, anything with “cake batter” in the title makes me want to try it! Surprisingly enough I’ve never used coconut butter (although it seems to be popular in the vegan community)… this may be my reason to give it a try!
Thats sounds decadent!!!! I am with you on the diet change for the better. I have recently had to cut back on the amount of dairy I eat (horrible I know!) due to some digestion issues I still haven’t quite pinpointed. I keep telling myself it’s for my health, and that usually makes me feel a little better!
Holy YUM that stir fry looks great! I’ve started swapping spaghetti squash for pasta in most my recipes (I’m a celiac) and I never thought to try it in stir fry – DUH! I’ve been using quinoa, which is great, but I’m really trying to limit my dependence on grains with meals, so this is fantastic. Thanks for the great idea! I’m a long time reader and rarely comment, but your pancake recipe has also been a lifesaver!

Great tips on how to make starting a diet easier. I definitely plan on using them on my own journey to get healthier! The one that really resonated with me was: Make Healthy Foods Visible. If I keep fresh fruit on my kitchen counter where I can see it, I’m more likely to reach for it, rather than junk food.
Those coconut butters look delish! I have no idea what I would eat them with though…. Did you just put them on some sort of fruit, or maybe on top of some paleo pancakes??

However, I notice that you’ve made many Paleo recipes recently and are also giving away a Paleo cookbook. What is the difference between the Paleo and SCD diet? Are they mostly similar? Is the consistancy the same as peanut or almond butter?
It’s not as thick and more grainy.

It is disgusting how much I love coconut ANYTHING. My shampoo and conditioner is even coconut (Desert Essence) and I have coconut candles everywhere. If you have the opportunity, pick up Trader Joe’s brand new “Canned Coconut Cream.” Ridiculous.
I still have yet to figure out coconut flour and I like to think of myself as a pretty skilled chef. It soaks up SO much moisture which completely changes the texture, taste, appearance, everything.

That. stuff. looks. amazing. YUM! I love cake batter flavored anything, like you do. Ice cream (of course) is the best, but this coconut butter looks unreal and I might need to use that promo code to buy a couple of jars. Did you like the honey pecan pie one?
