Back on the Yoga Train

Hello, hello! Happy Tuesday, friends!

Breakfast

I woke up craving my favorite (3-ingredient) breakfast pancake this morning, so I whipped one up and topped it with Teddie Peanut Butter and sliced strawberries. It was so good.

My Favorite Breakfast Pancake

  • 1 banana
  • 1 egg
  • 1 huge scoop of nut butter

Directions: Blend ingredients in food processor (or mash by hand) and then cook batter like a regular pancake. FYI: Medium-low heat works best. Otherwise, you’ll burn that bad boy!

After breakfast, I headed out to meet a CNC reader/new friend for Peanut Butter Wonderful iced coffees at Marylou’s. Heather and her husband were in town for a wedding this weekend, so she dropped me an email to see if I wanted to get together. It was so great meeting her! We had tons in common and lots to chat about!

Workout

After my coffee date, I headed to a class at Dancing Crow Yoga. On my birthday, I received an email from the studio inviting me in for a free class, so I took them up on their offer.

I hadn’t taken a yoga class since last fall, so I opted for a Vinyasa Flow. It felt amazing stretching out my tight hamstrings, hips, shoulders everything. Yep, I definitely need to stay on the yoga train. My body really needs it.

When was the last time you did yoga?

Lunch

After yoga, I headed home for lunch, which was a salad with roasted curry broccoli and cauliflower, grape tomatoes, tuna-chickpea-Parmesan salad, and Annie’s balsamic dressing.

Lunch also included a container of Oikos Greek yogurt with blueberries, chia seeds, and sliced almonds.

Snack

A few hours later, I whipped up a smoothie with blueberries, ground flaxseed meal, vanilla protein powder, and almond milk. I also ate a chocolate chip coconut NRG Bar.

Off to walk to pug and then CrossFit!

I have in the past, but not on a regular basis. Homemade nut butter is delicious though! :)

I can’t even tell you the last time I went to a yoga class. I’m honestly terrified to go to a class because surely I won’t remember a thing. I wish my gym just offered a one hour stretch class. That would be lovely. :)

Your smoothie looks delish, just like a blueberry milkshake.

Vinyasa flow is definitely my favorite style of yoga, from what I’ve tried so far. That’s the style my yoga teacher training is in. It’s even more fun to teach it!

Vinyasa is definitely my favorite…and I have GOT to get back on the yoga train myself. I miss it…and this runner needs it badly. I’m finding myself getting tighter and tighter as the miles hike up.

I’ve tried using less nut butter, but it doesn’t come out quite right. If you had a small banana and a small egg, it would work! :)

I got back on the yoga train a few weeks ago, went to a great class today – feels so good to get that stretch, and it’s a pretty good workout when you opt for the flow :)

I love reading your blog because not only do you provide me with healthy, yummy, lunch/dinner/snack ideas, but you also drink iced coffee all the time like I do! That lets me know that you can have speciality iced coffees daily and also have a fit body. Thank you for your blog :)

The more I read about your love for Crossfit, the more I really want to try it out. I have a feeling I would love it but the price tag….not so much! There is only one place near me and it is $145 per month. My gym membership is only $30 per month so it is REALLY hard to justify!!!

I miss yoga :( I was in yoga club at my college, but wasn’t able to do it this past year because I had class at the time that the club met. Luckily, this coming year my schedule doesn’t conflict with yoga, so I’m pumped to get back into it!

I totally hear you about needing to get back on the yoga train! I went to a Living Social deal for yoga and wine tasting (amazing) Sunday and realized how tight my legs were! I was still sore/stiff after my CrossFit workout yesterday!

I haven’t done my yoga in a long time, I am focused on getting back in shape after falling off the wagon and stressing for a month or so but I too notice how tight I am and really need to be sure to do some yoga | stretch. That is why one of my weekly goals this week was to be sure to do some yoga twice this week. Hmmm, it’s Wednesday and I haven’t yet, sound like a good plan for this afternoon. So, I just had to let you know that I decided to try this pancake recipe for breakfast this morning before heading to the gym. I hadn’t read through the comments, so I wasn’t sure about whether or not the nut butter went into the batter (since there was obviously some on top of your pancake too), so I just used 1 medium egg and 1 small (VERY ripe) banana. I added a dash of cinnamon and a splash of vanilla extract and whirled it in my food processor. I cooked my batter (5 tiny cakes) on medium low heat in a touch of coconut oil.
HOLY GOODNESS! I was skeptical that I was going to end up with mush in the pan, but they were SO good! Honestly, they reminded me of banana bread crepes. I topped mine with chunky peanut butter and homemade blueberry jam. I think I have found a new ‘go to’ breakfast. :) Thanks!

Guess who is going to try Cross fit tomorrow?! Thanks to your excitement over it and your progress, and seeing both Mal’s shape and you ridic abs in your pics, I’m very excited to do it! Won’t lie, I’m scared lol, but if everyone is as supportive as you say in class, it’ll be great! :) AND your OMG banana pancake recipe (I think its that one anyway…banana, oats, egg whites, protein & baking powders) is a HUGE hit with me and my hubby – I make a few batches at a time – they are amazing even cold the next day! Thanks!

Hi Tina! After reading your post i woke up craving the 3 ingredient pancake too! However, when i made it, it ended up looking more like scrambled eggs LOL It was impossible to turn it without making a big mess since the cooked side was in danger of getting burned before the other side was ready to be flipped! Any idea what i did wrong? I used the Mighty Maple nut butter from Peanut Butter&Co, could that be it? Thanks in advance!

Aww, bummer! The key is using medium-low heat to cook the pancake. I wait until the batter starts to bubble before I flip it. Hope this helps! :)

I am SO excited to try this breakfast pancake. SO EXCITED. I love pancakes and never make them, because I won’t let myself just eat empty carbs like that (occasionally I treat myself to some whole grain bad boys). This is the perfect solution. Genius :)

If I were to design my own pair of running shoes they would be slim through the width and very flexible from the heel to the toe, I would design the sole with extra grip and make the shoe very cute with a jersey netting like exterior.

I just wanted to leave a comment to thank you for the pancake recipe. I was looking for a breakfast option that would satisfy my sweet tooth, but without the guilt. I made it on Saturday morning and can tell you that it’s definitely going to become a regular breakfast menu item in our household! :)

I was wondering the same thing…about how many tablespoons of but butter do you use on top? I put about this much on my breakfast every morning, I just wanted to know roughly how much I’m using too! ;)
