• Protein Powder Cookies

    A couple of weeks ago, I attempted to make cookies with vanilla protein powder in them. Of course, I knew they wouldn’t taste like “real,” dessert-like cookies—I was aiming for a pre- or post-workout-type cookie—but what I created totally bombed. Let’s just say my first attempt at Protein Powder Cookies was completely inedible (and sort of disgusting). My second attempt, however, was much, much, much better!

    Protein Powder Cookies


    • 1/4 cup dried prunes or dates
    • 1/4 cup walnuts
    • 1/4 cup shredded coconut
    • 1/4 cup liquid egg whites
    • 1 scoop (31.8g) vanilla protein powder
    • 1 tbsp honey


    1. Preheat oven to 350*F.
    2. Combine all ingredients in a food processor.
    3. Divide batter into four cookies and place on prepared baking sheet.
    4. Bake for 10-12 minutes
    5. Allow to cool before serving.

    Makes 4 cookies

    The texture of these cookies is chewy, yet soft, and the flavor sort of reminds me of Fig Newtons with some nutty crunch from the walnuts.

    With a healthy mix of carbs and protein, they’re perfect for a pre-workout or post-workout snack. I ate one before and after CrossFit last night.

    those look like the bomb! i am amazed they have no flour/grains in them- not even mashed banana?! i’ll definitely have to give them a try. it is cookie friday, after all.

    I’m working through my first jar of vanilla protein powder right now. I’ll have to try these.

    I haven’t been making protein shakes for long, but I recently discovered that cinnamon seems to take away the protein powder taste that permeates most of my shakes. I wonder if cinnamon would be good in the cookies, too.

    I never used vanilla protein powder. Could you suggest a brand ? On did a search on Google and there are so many to choose from.

    I just started running and I am looking for nutritious snacks.

    I love the combo of dates and coconut in cookies! That’s how I always make my raw ones, but I’ve never tried a baked version. I really want to try these now!
