Hello! Happy Friday!

Dinner

Thanks to wonderful and talented Rachel Ray, I enjoyed a wonderful dinner last night. Her Frisée Salad with Poached Eggs & Bacon was excellent– really tasty and easy to make.

I added some chunks of avocado to my salad.

For dessert, I broke out a bag of butterscotch chips.

I only planned to eat a handful or two, but then Mal discovered the recipe for Oatmeal Scotchies on the back of the bag. A few of you guys mentioned how delicious these cookies are, so I offered to bake a batch. Might as well give them a whirl, right?

I only ate three of them, but it took some serious willpower to not eat anymore. The smell alone made me want to gobble them all up!

Breakfast

Like yesterday morning, I woke up craving peanut butter, so I made a batch of “Oatmeal” Minus the Oats with two huge scoops of Teddie Peanut Butter in the mix. I also drank a glass of iced coffee with almond milk.

Lunch

I went into NuVal for a few hours this afternoon, so I packed a lunch to take with me: salad with random leftovers and other fun goodies from the refrigerator.

In the mix: greens, tomatoes, roasted tomatoes, carrots, celery, green bell pepper, pasta with kale and walnut pesto, avocado, and truffle oil.

I also packed up a few Oatmeal Scotchies and a bottle of water for lunch.

I’ve never heard of a scotchie before. Is scotchie another word for a cookie?

Ummmm, those oatmeal scotchies look DELICIOUS!!! Haha I really should bake more, but with just me to eat them things can get a little dangerous…

I can’t keep butterscotch chips in my house. The whole bag would be gone in less than 2 days. Oatmeal scotchies would be just as dangerous. I may have to make them just to see what the fuss is all about! :)

Butterscotch when baking is IRRESISTIBLE!! It makes the whole house smell like it so you can’t escape it! I’m impressed you were able to stop at 3!

How have you never tried oatmeal scotchies?? That is one of all time favorite cookies… yum! I really need to branch out on my salads – you always combine things I wouldn’t think of – and they look so good!

I love butterscotch as well, maybe even more than chocolate chips.

I had to laugh when I saw what you were bringing to NuVal. That’s what happens when you are a healthy eater. You can’t just grab something from the corner store. I usually take a small shopping bag with me every day to work full of salad or soup with lots of fresh fruit and some gluten free cookies

My old roommate from college is a stress baker (meaning that during finals our kitchen looked like a pastry shop exploded), and one of her favorite things to bake were oatmeal scotchies. Except at some point, someone decided that “oatmeal scotchie” just didn’t fully describe the deliciousness of these little guys, and they have since been deemed “better than sex cookies”.
