Breakfast
This morning’s breakfast was the same as yesterday’s, but with a carton of coconut water added to the mix. I think I may have drank the coconut water a little too quickly because it definitely didn’t agree with me. Or maybe it was just the food and my intestines are a big bitch? I dunno. Last night, I drank a coconut water a lot more slowly and didn’t have any issues. I also notice that my symptoms are much worse overall in the morning.
Lunch
Lunch was a toasted gluten-free bagel with sunflower butter and sweet potato wedges on the side. This meal made my stomach happy.
Right now, sweet potatoes are my go-to food. I keep cooking big batches of sweet potato wedges to snack on throughout the day, and they don’t really give me any issues. Huge win with sweet potatoes! One day at a time, right?

Can you tell us how you fix the potato wedges. I’ve been wanting to try them but don’t know how to fix them.
Yep! Preheat oven to 400*F. Slice up sweet potatoes, toss in olive oil, shake on some sea salt, and cook in the oven on a baking sheet for 40-45 minutes. I usually toss them around every 10 minutes or so.
i’m going to look for the silver lining and say at least your tummy tolerates sweet potatoes… one of the best foods in life, colitis or no colitis!!

Have you ever considered donating some of the running stuff you receive to a worthy cause? I realize you probably have to use it for some length of time to be able to post a fair review, but I work with some schools in Tanzania and a lot of the students would love some new clothing/shoes, especially for soccer and netball games. I think it would be a great way to make some of those donations go a little further.

Love, love, love sweet potatoes. My favorite way to eat them is just to bake them and eat them cold. When they are cold they taste sweeter to me.

And yes, one day at a time is right! And, when one day at a time is too much, I shoot for smaller increments of time, like one part of the day at a time, or an hour at a time!! It makes pain/chronic illness more managable!
Hi Tina! I read your blog frequently, and as I see you’re struggling right now, I just wanted to let you know that it gets better!!! I was diagnosed with celiac about 4 years ago, and my younger brother was diagnosed with type I diabetes a year after (when he was 19 years old!). Life throws these curveballs at us randomly, and coming from a fellow food lover and weird digestion hater, I know it can be hard. But you just learn to deal with it! I’m sure you’ll be in positive spirits in no time. Good luck with everything!!

Wow! What an exciting surprise package!!! I have not worked out out in New Balance tennies, but I have heard great things!
Glad to read you are starting to feel better. I didn’t get a chance to comment yesterday but I also have been diagnosed with colitis and notice when I have a super tough workout or really long run (10+) miles, I get a small flare up. Food only aggravates my stomach if it’s already sensitive, otherwise I’m fine with anything. However,if I am not feeling 100% and I have fatty foods ( even healthy fats) it has an effect on me. I know everyone is different but for me it’s the stress on the body, physical or mental, that causes flare ups.

When I first discovered that I love sweet potatoes I roasted some up for my husband to try…he was not a fan. Then one day he tried one of my yam rolls(yam=sweet potato, right??) and suddenly they were the bee’s knees.
I love that you’re still excited about getting back to running! I know a lot of people who would let health issues get in the way of their fitness goals, so it’s great to see that you’re aren’t letting it get you down!!

Hey Tina- I thought of one other thing re: the colitis from reading your blog. I noticed that you put bananas on your pancakes and bagels etc and occasionally fruit in other foods. Some people have a hard time digesting fruit with other foods and of course there are nutritionists who claim you should always eat fruit by itself due to the enzymes. They believe fruit should be eaten an hour before or 2 hours after a meal otherwise it does not get digested and sits in your stomach and rots. Occasionally if I eat a banana immediately after a meal it does not agree with me. Just something to maybe try and see if it makes a difference.
