Life’s Short…

January 30, 2012

Good morning! Happy Monday!

Breakfast

My day started off with the creamiest bowl of oatmeal ever. I honestly can’t remember a bowl of oatmeal like this one in a long time.

In the mix:

  • 1 banana
  • 1/3 cup rolled oats
  • 1/3 cup liquid egg whites
  • 1/3 cup almond milk
  • 1/3 cup water
  • 1 tbsp ground flaxseed meal

I added all of the ingredients to a pot on the stovetop, and then cooked (and stirred) it until it was warm and creamy.

And, of course, breakfast included a glass of iced coffee with soy milk.

BOSU Ballast Ball Giveaway

Thanks to everyone who entered my giveaway to win a BOSU Ballast Ball Giveaway! Here’s your winner:

Heather

I love using Bosu balls at work! I have a desk job, and some days I am sitting for HOURS! So I like to replace my office chair with my bosu ball. The only problem…it rolls around all over the office! I was told it was an office “hazard”. So now its at home. *tear*

Congrats, Heather! Please email me at tina@carrotsncake.com with your full name and mailing address to claim your prize.

Love your Blog!!! Thanks so much for the inspiration. I have been trying to make oatmeal very similar to your recipe here. How did you cook it?

Check my FAQ page for a couple of different cooking methods. I usually make mine on the stovetop! :)

I want to come over to the CNC house for oatmeal breakfast — so fluffy!! Do you think that’s due to the liquid egg whites? YUM!

I think it’s a combination of the egg whites, banana, and almond milk. It’s the perfect storm of fluffy! :)

I have wanted to try egg whites and oats for a very long time. I finally did it this morning, your recipe is awesome! It’s very creamy but you still get texture in the oats which is the way I like it!
