Protein Pancake

December 19, 2011

I LOVE pancakes, so experimenting and creating more nutritious versions of them (that taste just as delicious) is really the best thing ever. I think I’m officially addicted to protein pancakes. Here are my a bunch of my favorite recipes:

And here’s a new one to add to the bunch!

Apple-Cinnamon Protein Pancake

_MG_5903-2 (800x533)

Pancake ingredients:

  • 1/4 cup rolled oats
  • 1/4 cup liquid egg whites
  • 1/4 cup plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Topping ingredients:

  • 1 medium apple
  • 1 tbsp lemon juice
  • 1/3 cup water
  • 1 tsp cinnamon

Directions:

  1. Dice apple into small pieces and then mix with lemon juice, water, and cinnamon. Cook in a pot on medium heat for 5-7 minutes until most of liquid has evaporated and apples are soft.
  2. Meanwhile, in a medium bowl, mix together pancake ingredients.
  3. Preheat a skillet (medium-low heat), spray with non-stick spray, and pour in the batter while shaping it into a pancake with a spoon.
  4. Heat until partially cooked and flip pancake.
  5. Once cooked the pancake is cooked through, remove from heat and top with cinnamon apples. (I also spread sunflower butter on mine.)

Makes 1 large pancake

Mmmm I’ve been enjoying raspberry Greek yogurt lately and it’s good stuff. I’ve never put yogurt in pancakes before but I should give that a try. I’m always hungry way before lunchtime and I think the protein kick would help!

If you’re ever low on Greek yogurt, try cottage cheese in the batter…works wonderfully!

Your pumpkin spice ones are TDF, in Rachel Zoe terms (to die for, for all those who aren’t as into reality tv as I am:))!

I woke up this morning craving protein pancakes but didn’t think I had all the ingredients so I made an omelette instead. Turns out I do! I’ll be making these guys tomorrow :)

I love this healthy pancake recipe…

You can add pumpkin, PB, whatever else you want. How do you always get your one big pancake to turn out so pretty? Mine always falls apart when I flip it!

@Luv What You Do: Medium-low heat on the stovetop is the key!

Time ago I discovered the pancake recipe of James Reeson with a lot of fruits, but I really like this more quick version

I love how these use whole food sources of protein instead of protein powder! I’m not really against protein powder, but I definitely prefer to get my protein from food. This recipe looks perfect!

I just saw you on Dr. Oz!!!!! Celebrity girl.

Oh and this pancake looks amazing… Even more so knowing I won’t be able to eat it for a few days. I just got my wisdom teeth out but as soon as I can move my jaw and feel my chin I’ll whip up an oatmeal pancake immediately.
