Butterscotch Chip Cookies

I don’t know much, but I do know this:

Butterscotch chips make everything better.

Butterscotch Chip Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • 4 tbsp butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup butterscotch chips

Directions:

  1. Preheat oven to 350*F.
  2. Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  3. Use a tablespoon to portion cookies on a greased baking sheet.
  4. Bake for 12-15 minutes.
  5. Remove cookies from oven and cool on wire rack before serving.

Makes 15-18 cookies

Wow… these cookies sounds amazing! I like to bake on Sunday for the week. When baking cookies I usually bake only the amount of cookies I plan on eating that week. I make the full amount of batter the recipe calls for, then I freeze what I don’t use. This way I don’t have to make batter again next Sunday and I don’t have any left over batter that goes to waste. Sometimes I’ll decide to bake all the batter and bring some to a nieghbors or a friends. I’ll have to try this recipe on Sunday : )

I made these today and they taste amazing…but, they came out a little flat. I feel like I always have that problem when I bake cookies. Any baking secrets for getting nice fluffy looking cookies that don’t look so flat and thin? Thank you!

@Filipa:
Don’t open the oven door until you are ready to pull them out. That will cause the cookie to go flat. Also when I make cookies I use Blue Bonnet for butter and only use 1 stick for chocolate chip cookies. I hope this helps.

I just made these and they turned out HEAVENLY! I doubled the recipe and made a double batch and they are chewy and perfect!
