• Apricot-Pistachio Bars

    Oh, how I love sweet and salty desserts!

    These Apricot-Pistachio Bars combine the best of both worlds in one delicious, heart-healthy bar. The chewy apricots, crunchy pistachios, and hearty oats create a texture that will keep you guessing every bite.

    Ingredients:

    • 2.75 cups rolled oats
    • 1/2 cup dried apricots, chopped
    • 1/3 cup shelled pistachios
    • 1/2 tsp salt
    • 3/4 cup brown sugar, packed
    • 1 egg
    • 1/4 cup ground flaxseed meal
    • 1/2 cup vanilla soy milk
    • 1 tsp vanilla extract
    • 1 tbsp brown rice syrup

    Directions:

    1. Preheat oven to 350 degrees.
    2. Spray 8″ X 8″ baking pan with non-stick cooking spray.
    3. In a large mixing bowl, combine ingredients until smooth.
    4. Spread batter in prepared baking pan and bake for approximately 25 minutes until bars are cooked all the way through.
    5. Let bars cool completely in pan before cutting.

    I agree. I’d like to see some nutrition info or at least a serving amount so I can calculate my own nutrition.

    Considering that this is your job, you really neglect his blog. 2 days and no posts, and when you actually do it’s usually something short and obviously rushed? I used to really enjoy this blog, and now I don’t at all.

    Sara is entitled to her opinion, and I have to agree with her quite frankly. It is true that this blog is Tina’s job, and although we all know how busy she is with a book and races, I believe the blog could use a little more sustenance.

    @Kim: I accidentally left a blank post a moment ago. Oops! Anyway, I just wanted to say that I agree with some of you folks. I had posted a comment here along the same vein a couple days ago, and I received a reply (I assume from the author of the blog?) the following morning that said “I’m sorry my life isn’t more exciting for you” but when I clicked on the link to the post, it was erased. It was very strange. I’ve been a fan of the blog for over a year now, but that experience left a very bad taste in my mouth. I’m more apt to check Kath Eats, Joy the Baker, Pioneer Woman, 101 Cookbooks, etc. only because lately I’ve found them to be more informative with more interesting content. I’m not starting a hate train, not at all, I just wanted to share my opinion – which everyone certainly has the right to do!

    @carla:

    Other bloggers just seem so much more passionate about their blogs, like Peanut Butter Fingers or KathEats. I stopped reading Kath’s blog because I couldn’t really relate to her, but now I think I may start again because her love for her blog just seeps through so much more than this one (and she works full time now too!). I think if blogging is going to be your full time job, which is great, you really need to put your all in to it. And in my opinion, that is not the case on this blog.

    @Sarah: I DEFINITELY didn’t say I didnt enjoy it. This blog has been an inspiration to me, and i love everything Tina has done for the health world. If you don’t like the blog, don’t read it. Your negativity is the absolute opposite of what tina is trying to promote with this blog. As women, we need to support each other, not tear each other down.

    Why can’t Sara share her opinion? I agree with her, I don’t enjoy this blog as much as I once did, sometimes it does feel like Tina is just rushing through the motions, which is totally her choice if she’s not feeling it as much these days.

    I can’t really put my finger on what seems different, just your overall tone, for example you don’t really post your dinners all the time anymore, which, I totally understand has got to get old, but I am super busy and liked your meal ideas since they are often fairly simple to throw together.

    I also feel like something is missing, maybe excitement? But understandable, since as people evolve, blogs will change – and I am sure your interests are not necessarily in posting all your meals. I really have enjoyed your blog and I really love your Health columns, so this is coming from someone who does appreciate your work and I’ve just noticed a change these past few moths – I keep reading because I have been a fan for awhile, and I also like pugs ;)

    These look delicious! I just tried your salted oatmeal chocolate chip cookies + a few adjustments and got them down to 92 calories a piece and they are DELICIOUS! Thanks for your awesome recipes :O)

    Man, those are some mean comments. Take it easy people!

    Tina posts like 2-3 times a day, it is OKAY to take time off for a couple days. I don’t see what the big deal. There are many other full-time bloggers who only post once a day, 5 days a week. Give the girl a break and I honestly prefer short-medium posts with pictures, too much writing can overwhelm the reader. Tina I love your blog, keep up the good work and can’t wait to hear about your NYC experience.

I happen to know that she is having a rough time recently, especially today, and would like to say that she deserves some foregiveness, in her defense.     I think I remember reading somewhere on your blog that you decided only to write when you had something to say and that you would refrain when you didn’t have anything interesting to post??     Tina, I read your blog almost every day but never comment–usually it’s in a snatched moment! I really appreciate the effort and passion you put into it–and the easy recipes. Because I have a desk job where I work very long hours (70+ a week) I have to say that I did find it a bit more relatable when you also worked full time. But that isn’t to say I don’t still enjoy it–just that your life is very different from mine, with much more time to devote to working out, attending healthy living events etc. I did like hearing how you fitted your passion for healthy living around a working life that sometimes makes it really hard!
