Pumpkin-Quinoa Muffins

Quinoa seems to be the grain* of the week! First oatmeal and smoothies, now muffins!

The quinoa and canned pumpkin make these muffins very moist. The dominate flavor is pumpkin, but there’s also a subtle nuttiness from the quinoa, which also gives the muffins a protein boost. The raisins and walnuts add just the right amount of texture and crunch.

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup brown sugar, packed
  • 1.5 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup canned pumpkin
  • 4 tbsp butter, softened
  • 1/2 cup quinoa, cooked
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/3 cup raisins
  • 1/3 cup walnuts, chopped

Directions:

  1. Preheat oven to 375*F
  2. Coat muffin tin with non-stick cooking spray or line muffins cups.
  3. Combine all ingredients in mixing bowl; blend well.
  4. Pour batter evenly into muffin tins.
  5. Bake for 35-40 minutes until muffins are cooked through.
  6. Allow to cool before enjoying.

Makes 12 muffins

Oh dear me, I have all these ingredients at home! The only thing I’d do is swap pecans for walnuts and we’ll call it a day!

Question: For the quinoa, how much dry quinoa does it take to come up with 1/2 cup cooked quinoa? Is it like rice that doubles? Thanks!

Yes it does. You should rinse it first and sometimes in the rinsing process you lose some too.

yummy! quinoa is my go-to “grain”, after oatmeal. With all those amino acids, who can say no?
I’m going to have to try this, but w/ rice flour instead of wheat…i’ll let you know how it turns out!

These sound delicious! Quinoa is pretty much the grain of the month for me, and I’ll take any application I can find! :) Yesterday I posted a recipe for quinoa salad with pluots and raspberry vinaigrette (http://wp.me/pSUCS-1Fw).. and I was pretty much smiling from ear to ear while I ate it for lunch because it was so tasty. I’m bookmarking these muffins for sure!

I have always wondered why you don’t combine wet and then dry and then add together like traditional muffin technique. I guess it always works for you, but is it just to save a bowl?

I like that you combine it all in one bowl — I have always made cookies/muffins this way and I never notice a difference (vs mixing wet and dry and then together).

I am hooked on quinoa so I may just try these muffins!

I was checking this one out on my reader and as I was scrolling saw that you used quinoa ?! Oh my. I’ve had this intense love affair with quinoa these days. I def need to make these. So many good recipes in blog-land right now and so little time. I just can’t get enough of that grain. Just last night found a way to incorporate it into a casserole that my friend Kim tried and said … “It tastes like it can’t possibly be healthy.” :D Huge stamp of approval. Now the real test… Will B (a quinoa hater) like it ? We shall see.

Can you feel the texture from the quinoa? I’ve been making pumpkin chocolate chip muffins and crumbling them over greek yogurt a lot lately, it might be good for me to transition to something healthier!

You had me at pumpkin… Once you added the quinoa, you sent me over the edge. Just last weekend I started craving pumpkin bread, or muffins, or pancakes so this recipe came at the perfect time. Can’t wait to bake these over the weekend with my miniature kitchen helper (she looks super cute in her apron).

I made these today and the kids and I both love them. It was a perfect afternnon snack after my run and before my spin class tonight. The only thing I changed was 1/2 cup of whole wheat flour and 1/2 cup of barley flour. Sooo moist and yummy!
