Quinoa seems to be the grain* of the week! First oatmeal and smoothies, now muffins!
The quinoa and canned pumpkin make these muffins very moist. The dominate flavor is pumpkin, but there’s also a subtle nuttiness from the quinoa, which also gives the muffins a protein boost. The raisins and walnuts add just the right amount of texture and crunch.
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup brown sugar, packed
- 1.5 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup canned pumpkin
- 4 tbsp butter, softened
- 1/2 cup quinoa, cooked
- 1/2 tsp vanilla extract
- 1 egg
- 1/3 cup raisins
- 1/3 cup walnuts, chopped
Directions:
- Preheat oven to 375*F
- Coat muffin tin with non-stick cooking spray or line muffins cups.
- Combine all ingredients in mixing bowl; blend well.
- Pour batter evenly into muffin tins.
- Bake for 35-40 minutes until muffins are cooked through.
- Allow to cool before enjoying.
Makes 12 muffins
* Most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard. It is a recently rediscovered ancient “grain” once considered “the gold of the Incas.” [source]

Oh dear me, I have all these ingredients at home! The only thing I’d do is swap pecans for walnuts and we’ll call it a day!
These look delicious! I’m embarrassed to say I’ve never tried quinoa before. Shame on me
Love love love pumpkin! And quinoa! I have a 4 pound bag at home, so always on the lookout for ways to use it up!
I have a giant bag too… Costco?
Those look fabulous! And I think I have all the ingredients.
Wow thats such a cool idea to use quinoa in muffins. I NEVER would have thought of that!
I still have a few cans of pumpkin in my pantry that need to be used up. Maybe I’ll try these!
I love the idea of quinoa in muffins. Too bad I don’t have pumpkin. These sound great.
I know what I’m making tonight for the trip to the mountains tomorrow!
Question: For the quinoa, how much dry quinoa does it take to come up with 1/2 cup cooked quinoa? Is it like rice that doubles? Thanks!
Yes it does. You should rinse it first and sometimes in the rinsing process you lose some too.
These look amazing! Thanks for sharing Tina. I must make these now
yummy! quinoa is my go-to “grain”, after oatmeal. With all those amino acids, who can say no?
I’m going to have to try this, but w/ rice flour instead of wheat…i’ll let you know how it turns out!
what a creative idea! nice to see pumpkin back in rotation–most bloggers only use it in the fall!
I’m very excited to try this recipe!
Scrumptious! I’ll be making a batch of these today, for sure!
Would love to make these – I have a can of pumpkin I’ve been meaning to use.
Q: whats the measurement of the quinoa? I’m assuming cup, but just to be sure, thought I’d ask.
Thx!
I never would have thought to use quinoa in muffins, great idea! Also, I had no idea it was in the leafy green family.
YUM! Pumpkin+Quinoa=A recipe I am definitely going to try!
I love pumpkin and I love quinoa. What a great combination for a muffin! I definitely want to try making these!
These look fantastic! I love anything with pumpkin in it!
Looks delicious! What a creative way to use quinoa! Making these for sure!
These sound delicious! Quinoa is pretty much the grain of the month for me, and I’ll take any application I can find!
Yesterday I posted a recipe for quinoa salad with pluots and raspberry vinaigrette (http://wp.me/pSUCS-1Fw).. and I was pretty much smiling from ear to ear while I ate it for lunch because it was so tasty. I’m bookmarking these muffins for sure!
We eat at least 2 -3 and they are mostly consume my me!
Looks like I have found my weekend baking recipe! Thanks!
i love making muffins, so quick and easy and you can really throw in anything you want. mini spice muffins. recipe at the bottom of the post:)
I’ve never baked with quinoa (cook it all the time!), so I think I need to this try!
I have always wondered why you don’t combine wet and then dry and then add together like traditional muffin technique. I guess it always works for you, but is it just to save a bowl?
Mostly because I’m lazy. But, it really doesn’t seem to make a difference since it all gets mixed together anyway.
Oh quinoa.. I have so much learning to do!
This is exactly why I hoard pumpkin in the fall
Yum! For all the veggies out there, quinoa is also a complete protein.
I’ve never had quinoa before, but these muffins made me want to try it! I just opened a can of pumpkin to try pumpkin oats, so maybe I’ll give these a try!
I definitely have some cooked quinoa that I plan to make these with
Quinoa is the best! And these look amazing.
I will make these so soon — I’m just hoping that veganizing them keeps the goodness!
Hmm, quinoa muffins? Intriguing! Those look delicious.
Looks delicious! I love pumpkin!!
I think we must go through 3 jars of nut butter a month. I love nut butter on an english muffin in the morning, and my husband is the king of pb&j.
These muffins look great!! I never would have thought to use quinoa in a muffin!
I like that you combine it all in one bowl — I have always made cookies/muffins this way and I never notice a difference (vs mixing wet and dry and then together).
I am hooked on quinoa so I may just try these muffins!
These sounds heavenly!!! I so need to give them a try. Maybe for the next potluck at work so I’m not tempted to eat the whole batch!! Hahaha
Those look great! I love quinoa but I’ve never thought to bake with it!
I really like qunioa but have yet to try it in baked goods! Looks like a great breakfast muffin!
I’ve eaten quinoa in a variety of ways-but never in muffins! These sound great!
I was checking this one out on my reader and as I was scrolling saw that you used quinoa ?! Oh my. I’ve had this intense love affair with quinoa these days. I def need to make these. So many good recipes in blog-land right now and so little time. I just can’t get enough of that grain. Just last night found a way to incorporate it into a casserole that my friend Kim tried and said … “It tastes like it can’t possibly be healthy.”
Huge stamp of approval. Now the real test… Will B (a quinoa hater) like it ? We shall see.
I don’t like raisins but I feel like they do add something here. Anyone have any suggestions for a substitute?
That looks so so so good! I need to buy some more pumpkin – I’ve been out for weeks!
Can you feel the texture from the quinoa? I’ve been making pumpkin chocolate chip muffins and crumbling them over greek yogurt a lot lately, it might be good for me to transition to something healthier!
awesome photo of the muffins Tina!
I recently bought quinoa from my local health store out of the bulk bins, but I don’t know how to cook it. Advice please.
I’m a pumpkin ADDICT so you can bet I’ll be making these
. Yay for quinoa!
You had me at pumpkin… Once you added the quinoa, you sent me over the edge. Just last weekend I started craving pumpkin bread, or muffins, or pancakes so this recipe came at the perfect time. Can’t wait to bake these over the weekend with my miniature kitchen helper (she looks super cute in her apron).
I made these today and the kids and I both love them. It was a perfect afternnon snack after my run and before my spin class tonight. The only thing I changed was 1/2 cup of whole wheat flour and 1/2 cup of barley flour. Sooo moist and yummy!
