Tonight, Mal and I attempted Healthy Potato Pancakes from Runner’s World for dinner. I’ve been on serious a potato kick lately, so I was really looking forward to trying this recipe, but, sadly, it was an epic fail.
We followed the recipe exactly, but no matter what we tried, the batter would not solidify. We added an extra egg with the hope that it would help ‘stick’ the ingredients together.
But, so such luck. The batter ended up as mushy, scrambled egg-like mixture.
It tasted fine, but it wasn’t at all what we had hoped for. Wicked bummer. (The potato pancake on my plate was molded into a patty just for the photo.)
On the side, I had some roasted brussels sprouts and steamed spinach.
Before dinner, I joined Mal for a quick trip to the gym. I don’t typically do two workouts in one day, but I had the urge to run this evening.
I did the workout below and covered 3.3 miles in 30 minutes on the treadmill.
Afterward, I stretched for a solid 20 minutes at home while catching up with Ellen on my DVR. My muscles were so tight! Yoga is definitely on the agenda for tomorrow.
Now, I want dessert! Cookie time!
