Color Clash

I know that I’m eating a nutritious meal when my food clashes with the majority of my place mats! I had to use a neutral-colored one to photograph my lunch today. All of my colored place mats were just too much! 8-O

For lunch, I enjoyed a soup & salad combo: Winter Lentil Soup and a homemade arugula salad topped with crumbled feta.

After lunch, I did a little baking while listening to the Rockin’ Holidays radio station on Pandora, which I am loving! I pretty much like all holiday music, but I prefer the upbeat (aka rockin’) songs. The Rockin’ Holidays station weeds out the slow stuff and it rules.

Ok, back to baking!

So, I have half of a bag of apples that need to be used up ASAP. They’re already past the “snacking” stage (i.e. the skin is getting wrinkly), so now they can only be incorporated into recipes. It’s now or never!

So, I used a bunch of them to make my favorite Apple Crisp recipe.

Once they came out of the oven, I had a few bites, but I’m saving the rest for dessert this evening.

The Apple Crisp looks delicious! I just made mint chocolate chip cookies :) Found it in a “Christmas Cookies” magazine and they turned out great…and green!

I bought a piece of pumpkin bread with cream cheese frosting along with my coffee this morning, but have yet to eat it. For some reason it’s not screaming my name yet… Maybe this afternoon!

I prefer the slower, religious songs. I find the pop Christmas songs just aren’t as good.

Not yet, but by the end of the day, I am sure I will have enjoyed cookie Friday! : )
I need to look up that rockin’ Christmas station on Pandora. We have been playing just the Christmas station and there are some pretty terrible songs that play!

Haha, that’s a good way to gage a meal’s health factor.

I haven’t had a cookie, but I had a few bites of cinammon roll this morning and there are cupcakes in my future tonight! Close enough?

I Love apple crisp too. If ever you’re in the mood for a slight twist give Martha Stewarts recipe a try from her site. It uses one of your favorite ingredients, Oatmeal.

PS: Thanks for the tip on the pandora station. The one I was listening to kept playing really sloooooooww songs from like the 1930s! lol So, im happy I can finally listen to some upbeat songs yeyyy!!

I looked in the fridge to realize I’m all out of butter, so cookie Friday has been postponed to cookie Saturday. :P

Although now I’m rethinking my plans to make cookies because that apple crisp looks sooo tempting!
