French Toast Baked Tofu

Ooh, boy, French Toast Baked Tofu. This is quite a yummy recipe and it makes me very happy! :mrgreen:

I intended to make Pumpkin Spice Baked Tofu, but the pumpkin flavor didn’t really stick. Instead, the baked tofu tasted more like French toast. I mean, pumpkin spice would have been nice, but I’ll take French toast any day! ;-)

French Toast Baked Tofu

Ingredients:

  • 1 package of extra firm tofu
  • 1 cup vanilla soy milk
  • 1.5 tbsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp nutmeg
  • 2 tbsp canned pumpkin*
  • 1/4 cup brown sugar
  • 1.5 cups shredded coconut

Directions:

Press water from tofu (about 2 hours) and then cut into cubes. Mix soy milk, vanilla extract, cinnamon, ginger, and nutmeg (and pumpkin) together. Then, place the tofu cubes into the mixture and allow to marinate for 2 hours.

In a separate bowl, combine the shredded coconut and brown sugar.

Mix well.

When the tofu is finished marinating, use a slotted spoon to remove cubes from the liquid mixture and add to the bowl with shredded coconut and brown sugar.

Coat the tofu cubes with the coconut + brown sugar mixture.

Then, spread the coated cubes (and remaining coconut) onto a baking sheet lined with tinfoil or parchment paper. Bake at 375*F for about 15 minutes. Remove from oven and toss tofu cubes. Return baking sheet to oven and bake for another 10-15 minutes on 375*F until shredded coconut begins to brown.

Remove from oven and allow to cool for a few minutes. Serve warm or cold.

* Since the pumpkin flavor didn’t really come through, you could probably nix this ingredient all together.

I’ve never tried sweet tofu like this before! I don’t know whether I would eat it for breakfast, dinner or dessert! :P It sounds delicious though.
