Oh my goodness, I’ve eaten so much delicious food today!! Basically, I ate allllll day long. I’m not complaining, but holy moly! The good eats just don’t stop coming! But, doesn’t healthy living = good eating!?
Lunch
Kath did a great job planning the menu for the HLS lunch. It was healthy, delicious, and fun!

Watching other bloggers take photos of their food never gets old. I feel right at home with these folks!


I absolutely loved the lunch spread today. I wanted a little bit of everything!


Chandra and Monica were psyched about lunch too!

I love you even more, dessert!


I loaded up my plate with salad greens, roasted veggies, quinoa-edamame salad, chickpea salad, a piece of Swiss cheese, and a pickle.

And, of course, my lunch included a brownie on the side.

After lunch, Allie gave me the best gift ever: Allie Bars!!! I’ve been dying to try these babies, so I was beyond excited when she handed me a package of them! I might have to break into one sooner than later.

Snack
Once the afternoon sessions ended, Athenos hosted a very yummy 45-minute break that featured a number of delicious feta and hummus recipes.

I wasn’t really that hungry, but I ended up trying almost one of everything and a downing a million tortilla chips with Southwest Taco Salad dip on them. I’m now obsessed.




I cannot wait to make this Southwest Taco Salad! It’s out of this world! A lot of other HLS attendees were talking about this recipe, too. It’s a good one!


Athenos also offered a fun salad-inspired photo booth. Kath and I thought it would be a great opportunity to practice some yoga poses. Check out the expression on my face!!

Heading out for a walking tour of Chicago and then dinner with bloggers.

Those food hats are funny! It’s nice to have healthy food when you’re sitting in a conference all day. I hate when I have work meetings and the only food choices are really heavy, greasy sandwiches and chips.

I have been so sad all day that I’m missing this!!! I am definitely going to come next year! I love when you said “watching bloggers take pics of their food never gets old” –that would make me feel right at home too! I want brownies with MY lunch!!!

Roasted veggies and dessert both make me so happy too! Yay for healthy eating priorities! I love how the summit seems like it is just as much about the food, the presentations, the lifestyle as the PEOPLE — I can see how much everyone is having and how people are connecting so well. Love it!
