So much good food! Buffalo chicken pizza, donuts… get in my belly!!! :mrgreen:

This evening, while I went for a 4-mile power walk, Mal cooked dinner for us. He’s the best! :-D Mal made buffalo chicken pizza with a simple salad on the side.

Muffins That Taste Like Donuts

Have you seen the Muffins That Taste Like Donuts recipe that has been floating around the blog world lately? Well, I did. And, not surprisingly, I needed to make it immediately. Hello, muffins that taste like donuts?!? Yes, please! ;-)

Oh, boy. These donut muffins are delicious. But how could anything baked, dipped in butter, and covered in cinnamon and sugar not taste good? I loved ‘em. My husband loved ‘em. He agreed that “they really do taste like donuts.”

I also really like that the recipe’s ingredients are fairly basic. I had all of them in my house, so it was easy to whip up a batch… which could potentially be trouble in the future! ;-)

Now that you know how delicious these donut muffins taste, here’s how to not eat them all in one sitting! ;-)

Balanced Eating: Baked Goods

Half the recipe. Cutting the recipe in half means that there are half as many muffins to temp me (and eat). Basically, it’s instant portion control.

Use a mini muffin tin. Mini muffins = fewer calories, but are equally delicious.

Give some away. I asked Mal to give a few muffins to Dave at his softball game tonight. If the muffins are not in the house, I can’t eat them.

Put ‘em away: Out of sight, out of mind. I enjoyed two muffins and then packed the rest away in Tupperware.


Think about something else. Obviously, I could eat an entire batch of donut muffins in one sitting, no problem. But, if I distract myself with an activity, like painting my nails, it’s so much easier to resist the temptation.

Ok, now that you know what to do, go make the donut muffins. You know you want to! ;-)

It’s funny you post this because a few days ago I made the vegan “Jelly Donut Cupcakes” from Veganomicon. I used whole-wheat pastry flour and cut the sugar to make them more muffin-like, but they have a great jam filling in the center (I used Crofter’s raspberry fruit preserves) and really do taste like jelly doughnuts. No butter or cinnamon in that recipe, but I think it’s the pinch of nutmeg that gives ‘em that authentic doughnut-y flavor. Made them on a whim and had no idea this was a recent trend in the blog world!

Cinnamon, sugar and butter – you’re right, you can’t go wrong!
I tend to rely on the stick ‘em in the freezer method of overindulgence prevention. That being said, I have eaten half-frozen baked goods before, so clearly I need a little more willpower :)

Those look delicious, and thanks for including tips on how to not eat them all! I like to halve recipes for the same reason, and I always make a batch of cookies and save a couple and bring the rest to work or have J bring them to his work.

I really like the rubber band visual reminder, I will try that…when I make the donut muffins!

Ah, yes. I always have problems resisting the baked goods I make… I always have to taste test A LOT during and after the process of baking. These are great tips ;)

I just printed out that recipe yesterday to make! Wow! I like your tips – at the moment ‘m always halving recipes, because I’m cooking for just me, and I HAVE eaten entire batches of cookies and brownies in two days. It’s less worrying when it’s only a half a batch to begin with ;)

I just read about those muffins on “Can You Stay For Dinner”. I’ve made something similar. And they are good. Like, so good that I cannot make them because I will eat the entire batch before they even get a chance to go in the freezer, lol.
