Woah. Monday is really flying by for me! I’m not complaining since I am getting a lot done and we’re that much closer to the weekend, but, jeez, where did the hours go!?! (Is it bad that I’m already looking forward to next weekend?
)
Lunch
Lunch was fast, simple, and especially delicious this afternoon. I made a big salad with lots of fresh veggies, basil & tomato Athenos feta, and balsamic vinegar. There were lots of amazing flavors in this salad.

Feta!!!

On the side, I had a piece of toasted Chia Seed Quick Bread with melty Barney Butter. Check out the Barney Butter running over the sides of the bread. Mmm!


CNC Book Update
Last week, I finally received my book edits from my editor– all 159 pages of them!
Needless to say, I have A LOT of work ahead of me, but at least we’re moving in the right direction now. My editor and I also decided on a title and subtitle for my book! Very exciting!
Ahh, it’s really happening!
A lot of you asked about my book’s release date. Right now, it’s scheduled to be at Barnes & Noble stores in May 2011. I’ll be sure to keep everyone in the loop about the pre-sale, too!

Time for a workout! I’m going to attempt a 6-mile run today– my longest run in more than a year!! Wish me luck!

That is so exciting about your book progress. I can imagine how overwhelmed you feel with edits. That is how I felt with my masters thesis. It was tough. Looking forward to seeing your book on the shelves!

Whenever I use feta on a salad, complimenting it with balsalmic dressing is a must! It’s really a match made in heaven…
