I don’t think that I’ve ever eaten so many lentils in one day! Holy lentils! šÆ
But, at least I enjoyed some of them like this:
Oh, yes, that is a Lentil Brownie covered with warm caramel sauce, and it was fabulous! š
Lentil Brownies
Makes 12
Ingredients:
- 1 cup cooked lentils, drained
- 1/2 cup sugar
- 3/4 cup all-purpose flour
- 1/2 cup cocoa powder
- 2 eggs
- 4 ounces chocolate-flavored yogurt
- 1/2 cup chopped walnuts (optional)
Directions:
- Preheat oven to 350*F.
- Combine all ingredients in a large mixing bowl.
- Coat 8X8 baking pan with non-stick cooking spray.
- Pour batter into pan and spread evenly.
- Bake for 20 minutes until brownies are firm.
- Allow to cool before cutting.
- Eat and enjoy!
These brownies turned out really chocolately, but the texture wasn’t quite right. I like my brownies moist and cake-like, but this batch was a bit too dense for me. Maybe the recipe needs some fat in it?Ā Now don’t get me wrong, these Lentil Brownies turned out pretty good, but the recipe is still a work in progress, ya know? Of course, the caramel sauce made it taste better! š
Dinner
Tonight’s dinner also included lentils as well as brown rice, turkey kilbasa, onions, carrots, garlic, and Worceshire sauce. I didn’t measure any of the ingredients. I just cooked up the different elements, combined them in a big pot, and threw in galic and Worceshire sauce until it tasted good. What can I say, I like to wing it in the kitchen! š
I also drank a small glass of white wine with dinner.
Snack
For the record, I snacked on a Peanut Butter Cookie Luna Bar while at NuVal. Lunch didn’t hold me over very well, so a snack was much-needed. (Btw, I wasn’t a fan of this flavor. It tasted too artificial. Boo. š )
Time to PACK and get my life together for tomorrow’s trip to Philly. I’m so excited!!!
