Well, hello! 8-)

Today was a BUSY one for me, but I kept my nose to the grindstone and busted out a ton of work. I was all business today! (I’m trying to get a lot accomplished early in the week so I can play later. Rumor has it that Mal is planning something fun for Friday! ;-) )

Workout

So, remember when I considered joining a second gym a few weeks ago? Well, a friend of mine hooked me up with a 2-week membership, so I could try it out. So cool! A mini membership is exactly what I need to make a decision. Thanks, Christine! :mrgreen:

After breakfast, I headed to the new gym for a spinning class. The gym is quite a bit bigger and nicer than I expected, so I was pleasantly surprised! :-D I got a really great workout at spin class and left the gym sweaty and somewhat exhausted. Spinning always seems to kick my butt!

I’m planning to try out a few more classes at the gym and then crunch some numbers to see if I can afford it. I know that I don’t need another gym membership, but if I use it and it benefits my health, maybe it’s worth the cost?

Lunch

As previously mentioned, I was all business today. I ate lunch while working away at my laptop. I had roasted brussels sprouts mixed with lentils and feta cheese.

I love this combination of flavors! It’s a winner! :-D

I finished off lunch with a sweet treat: Caramel Oikos. Mmm!

Snack

Lunch did a really good job of holding off my hunger, so when my usual snack time rolled around, I was only a little bit hungry. I ended up munching on an apple and pouring myself a half glass of iced coffee with soy milk.

Before leaving the house to head downtown, I snacked on a couple of handfuls of Doctor Kracker Apple Crisps that the company sent me to sample the other day.

The Apple Crisps did not taste like apple, but they sure were delicious– thick, grainy, and slightly sweet.

I love, love, love the texture of these crackers. The Doctor Kracker website describes it really well: “… every Dr. Kracker cracker bursts with texture, character, and gusto. No-nonsense. Not for the faint of heart. And, everything you always wanted in a cracker.” Exactly. Perfect description.

Dinner

So, a few weeks ago, one of the PR people from Cabot Creamery and Olivia’s Organics contacted me about the possibility of working together. I love both of these companies, so when she invited to dinner at Stephi’s on Tremont, I jumped at the chance. Cheese, greens, and Stephi’s?!? Sign me up! :mrgreen:

If you’ve never heard of these brands, Cabot Creamery and Olivia’s Organics are both wonderful local companies that care about the foods we eat and do good things for the community and environment. Cabot has a partnership with Stephi’s on Tremont and Stephanie’s on Newbury– the restaurants use over 150 pounds of Cabot cheese each week! Olivia’s Organics goes back three generations and started with a grandfather selling celery hearts in a stall at Faneuil Hall in Boston. I’m really excited about the possibility of working with these companies in the future.

Ok, onto the food!

I started the meal with an order of Cheddar Bacon Apple Fritters, which were light and crispy fritters stuffed with green apple, Cabot aged cheddar and smokey bacon. The fritters were served with a thick and creamy horseradish dipping sauce.

These were ridiculous good. I ended up eating almost all of them!

For my entree, I ordered the Miso Glazed Salmon Salad, which was fresh atlantic salmon served with shaved romaine, pickled vegetables, sesame seaweed salad, sliced avocado, and fried ginger served. On the side: sesame honey vinaigrette and ponzu for dipping.

Great salad! I definitely got my daily dose of omega-3s! ;-)

I especially loved the pickled veggies and sesame seaweed salad. (Ok, so I pretty much love anything with sesame oil on it. ;-) )

The fried ginger on top of the salmon was really interesting. I’ve never had anything like it before. It had a very potent flavor, which was perfect with grilled salmon.

I was too full for dessert, but Rachel (my dinner date) insisted that it take it to-go. I’m not one to turn down a complimentary dessert, so I ordered the Fudgy Brownie Bread Pudding to take home with me. I had a couple of bites, but my husband took the reigns on devouring it. He loved it!

Getting my life in order then heading to bed. I have another busy day tomorrow!

Your lunch made me drool, I am definitely going to try that combo. The Brussels sprouts looks amazing. About the two gym memberships–there are definitely far worse ways to spend the money;)

Can I just say that this looks like the most amazing dinner, ever, ever, ever? Cheese and apples and seafood! Wow! I think my favorite snack ever is Cabot extra-sharp white cheddar with crackers and a pink lady apple or green grapes. Mmmmm…

I’m obsessed with Dr. Kracker! They just have so much body to them, for lack of a better word. Glad to hear that their new flavor is good. I just finished up my Seeded Spelt crackahs, so I might have to pick up the apple flavor soon. Can’t be without Dr. Kracker for too long now.

Sounds like a successful day, I love that feeling of accomplishment when all is said and done. I’ve seen those Doctor Crackers at the store a couple of times now and have always wondered how they were, I’ll have to pick up a box now that I’ve heard some good things.

What a yummy day! I think seaweed salad is one of my favourite tastes in the world (though I do miss that Caramel Oikos too… we have nothing like it here in Australia!)

those fritters look incredible. i can only imagine how good they were!

did you know that “atlantic salmon” means it is farmed, not wild? farmed salmon actually is NOT a good source of omega-3s because they are primarily fed grain. salmon farming is also really bad for the environment, so it’s considered an unsustainable choice. even target just announced that they will stop carrying it. just something to consider!

What a great opportunity, anything with cheese is great! You really do get the most awesome opportunities!
It must be a good feeling getting everything in order. I love sorting myself out but there is always so much to do!

i love dr kracker products! i keep a box of pumpkin seed cheddar crackers in my office desk at all times. i have yet to try those apple crisps, but i might just have to seek them out. sounds like you have managed to get such wonderful opportunities from work! hope you are enjoying all of them. i know we all sure love reading about them :)

LURVE Cabot (go Vermont go!)! My cousin/best friend lives on a farm with her boyfriend in VT and they sell ALL of their milk to Cabot! I like to think I’m supporting them directly when I buy it down here in VA! :) Those fritters look TO DIE FOR!

Seaweed salad is my favorite! I also LOVE Cabot cheese…I grew up in Vermont, and Cabot is just about the only tourist attraction in the state that I didn’t work for: I was a tour guide at the VT Teddy Bear Company and at the Ben & Jerry’s factory.

I love Fitness Unlimited! I loved the classes compared to QAC and I am very happy there. I have yet to try spinning. Maybe I should.

I’ve been a Fitness Unlimited member for years now. The staff is great! I’ve done personal training, small group personal training, and nutrition counseling there – all great experiences. If you’re looking for a great class, I highly recommend any classes taught by Ann Marie and Alison – they’ll kick your butt (in the best possible way) :)

Tina, are you sure you can’t just pay for the Body Pump classes separately? Seems like if that’s the only thing keeping you at the old gym, it might make sense to just do the classes, say once a week.

I wonder if, after explaining how you are considering the new gym as a second gym, they would give you a better deal on the membership. It took me over a year to realize that my gym makes up all kinds of membership deals, and I was one of a few who paid as much as I did. So, maybe there are alternatives to the quoted price.

Doctor Kracker crackers are THE BEST! I have been loving the pumpkin seed kind but I have a feeling my co-workers don’t equally love the crunch factor. oops. ha.
