    April 5, 2010

    Seriously, where did today go?!? 8-O I still can’t get over how quickly it flew by. Let’s hope the whole week goes by the same way. I want to be in Florida already! ;-)

    Dinner

    After such a late night last night, Mal and I have been sort of dragging today. So, not surprisingly, we both just wanted to chill on the couch and veg this evening. We kept dinner simple and ate in front of the TV while catching up with our DVR.

    I threw together some quick and easy pita pizzas with red bell pepper, onion, shredded cheddar cheese, and marinara sauce on Joseph’s pitas. On the side, I had a big salad with balsamic vinegar.

    For dessert, my generous husband shared his “Mal Only” peanut M&Ms with me. What a guy!

    I ate 2 or 3 small handfuls. So delish!

    My favorite italian dish is veggie lasagna. zucchini, yelloq squash, mushrooms, tomotoes. Yum!! I’ve been wanting to try the bertolli meals

    I absolutely LOVE sauteed portobello mushrooms with the stems chopped, sauteed with onions, and stuffed back into the cap. Top with sprinkling of cheese and broil in the oven!! SO SO GOOD!!!

    I just loveeee pasta with a spicy tomato sauce and shrimp…and of course pizza, you really can’t go wrong!

    I love mushrooms and could eat them everyday. I love them roasted in balsalmic vinegar but my ultimate favorite mushroom dish is balsalmic chicken and mushrooms. So good. I am not a huge pasta fan but because the hubs loves it I give in occassionaly and love some eggplant parmesan.

    Mmm… Italian! When I first went to Italy at the age of 12, I ate ribollita, a Tuscan peasant soup, like it was my job. I still haven’t made it myself, but I should! So easy, hearty, and pretty darn healthy! I also love mushrooms. I don’t eat meat, so they’re a great meaty alternative. I like to saute them in some olive oil (don’t have a grill), and make sandwiches with a basil aioli, spinach, tomato, and roasted red pepper. Yummy!

    My favorite way to eat mushrooms is marinated in some balsamic, then skewered and grilled with other veggies! I have been thinking about it recently with the warmer weather, and can’t wait to get grilling :)

    My favorite Italian dish is lasagna. So yummy and satisfying. I like to have it with a Caesar salad, garlic bread, and a glass of red wine.

    My favorite Italian dish is anything with gnocchi, or just a classic lasagna. I’ve always loved Italian food, which is odd for a girl growing up in a Puerto Rican household!

    My favorite italian dish is whole wheat pasta with roasted butternut squash and onions topped with a little bit of goat cheese…so yummy :) For my go to mushrooms I roast baby bellas with a little chopped garlic and rosemary, perfect topping for steak, chicken, or tossing in an egg white omelet.

    My favorite Italian dish- my grandmother’s eggplant parm!! Nothing can beat it. I won’t even order it at a restaurant because hers is so good!

    My favorite Italian appetizer is beef carpaccio with finely shredded parmesan on top with arugula salad followed by gnocchi in a mushroom cream sauce. Great giveaway!

    First of all, I love your blog! I found it over on SparkPeople a week or two ago, and I’ve been lurking ever since! My favorite Italian dish is my fiance’s pizza! He makes the best pizza! Actually, I guess that’s not really a dish, so um.. I’ll go with Chicken Parm! :) Love that stuff. We’re having it for dinner tonight, actually.

    Favorite italian would be spaghetti and meatballs (with garlic bread, of course) Mushrooms I like them chopped up and included in my Quinoa Stuffed Peppers.

    I guess pizza, thin crust though…and no cheese. If pasta, I like the fancy long macaroni noodles with a simple sauce and lots of veggies.

    and I love mushrooms in all forms. I eat a lot of white mushrooms and I love grilled portobellas.

    Even though it’s not truly Italian, but Italian-American, chicken parm is on my mind since I just had leftovers for lunch! I made a healthy baked version with whole-wheat bread crumbs, low-fat ricotta cheese, and delicious Puttanesca sauce! And speaking of mushrooms…I added a HUGE handful of marinated mushrooms to the top before baking. Delicious!

    My favourite mushroom dish is definitely grilled portobellas marinated in balasmic vinegar. Easy and delicious. Its got such a wonderful meaty texture!
