Ahhhh! I can’t believe that I am going to FLORIDA today! I haven’t been to Florida since Spring Break of my sophomore year of college. My girlfriends and I went to Panama City Beach for the entire week. Let’s just say, PCB is the perfect place for Spring Break. 😉
I think we all had a really good time!
This trip to Florida, however, is going to be quite a bit different! I have work to do– and hopefully, some delicious baked goods to eat. I wonder if the Pillsbury people need any help judging in the dessert category? 😉
A BIG thanks to Eggland’s Best and Pillsbury for giving me the opportunity to go to the Pillsbury Bake-Off® Contest. Eggland’s Best was kind enough to pay for my travel expenses to attend the event and blog about my experience. Can’t wait!
Breakfast
Good breakfast this morning! I was sort of in the mood for oatmeal, but I wanted something a little different. I went with spelt flakes, bulgur, and wheatberries.
In the mix:
- 1/4 cup spelt flakes
- 1/4 cup bulgur
- 1/2 tbsp chia seeds
- 1 tbsp ground flaxseed meal
- 2 tbsp wheatberries
- 1 pear
- 2 scoops of peanut butter
- Raisins
There was a lot of chew in this bowl.
We’re out of soy milk, so I’m going to grab an iced coffee at the airport. I still need to finishing packing!

My name is Kelley and 10 years ago, I was diagnosed with Non-Hodgkins Lymphoma. I was treated at the Dana-Farber Cancer Institute in Boston. To celebrate my decade long remission, I’m running the Boston Marathon with the Dana-Farber team. I couldn’t think of a better way to celebrate life than to run a marathon while raising money for the same hospital that saved my life.
I started running in 2005 and haven’t looked back since. The Boston marathon will be my 3rd full marathon. I’ve also completed 8 half-marathons in the past 5 years. I’m definitely a “back of the pack” runner, but I don’t care, because for me, hearing my lungs fill with air and seeing my feet hit the pavement is the greatest gift there is.
Check out this fun running video I made recently too.

This is my 2nd Boston and 3rd overall marathon, I qualified for Boston by running C.I.M. Marathon in December of ’08. I got into marathons weirdly after a broken leg. I played college soccer and broke my leg in half in a game my junior year. After recovering, all I could do was run straight… no side-to-side or jumping… so why not knock off a life goal and run Boston? I’ve been hooked on races ever since. My all time favorite being Beach to Beacon in my hometown of Cape Elizabeth.
P.S. I know how you guys love Element Bars! Eversave has a great deal on them this weekend– pay just $10 for $25 worth!
